Banana Bread In A Jar
This is a straightforward recipe, air fried in mason jars. You can use ramekins, but I had some extra mason jars leftover from my canning days, and I thought, why not?
So, while it looks odd, Banana Bread in A Jar has been around for a long time. My mother used to use them and bake them up. The moisture from the jar actually makes great and moister banana bread.

How To Make Air Fryer Mason Jar Banana Bread

Step One: Start by creaming the shortening and granulated sugar, and fold in the eggs.

Step Two: Mix well.

Step Three: Add the bananas, and mix well.

Step Four: In another bowl, add the all-purpose flour, baking powder, baking soda, ground cinnamon, cloves, and salt, and mix well.

Step Five: Fold the dry mixture into the wet mixture, and mix well.

Step Six: Fold in the diced pecans.

Step Seven: Pour the banana bread batter into the mason jars, filling about 2/3 the way full.

Step Eight: Set the air fryer temperature to 320 degrees F, air fryer setting. Set cook time for 12-15 minutes.

- Use ripe bananas: The riper, the sweeter and more flavorful your bread will be.
- Grease jars well: Prevent sticking by thoroughly greasing or lining the inside of your mason jars.
- Don’t overfill: Fill jars only 2/3 full to give the bread room to rise without overflowing.
- Check for doneness: Insert a toothpick; it should come out clean or with just a few crumbs.
- Cool before serving: Let the jars sit a few minutes before removing or eating to avoid burns.
- Mix-ins are optional: Add chocolate chips, nuts, or dried fruit for extra flavor.

What kind of mason jars should I use? You must use only canning jars designated for canning and baking (like Ball or Kerr brands) with wide mouths. Ensure they are freezer and heat-safe and are free of cracks. Never use jars with visible seams or painted designs.
What size mason jar is best? Small 4-ounce or 8-ounce (half-pint) jars are ideal. They fit well in most air fryers and allow the bread to cook quickly and evenly. Larger jars may not cook through before the edges dry out.
How full should I fill the jars? Only fill the jars about halfway or 2/3 full (no more). The batter needs plenty of room to rise without spilling over the top during the air frying process.
Do I use the lids or rings? No. Do not bake the jars with the lids or rings on. The lids create pressure and can be dangerous. You bake the bread directly in the open jar.
How do I prevent the top from burning? Mason jars focus the heat, so the top can brown fast. If the top is golden brown but the center is not done, loosely cover the top of the jars with a small piece of aluminum foil for the remainder of the cooking time.
How do I check if the bread is done? Use a thin wooden skewer or toothpick and insert it into the center of the bread in one of the jars. It should come out clean (not wet batter) when fully cooked.
