How To Make First Watch Market Hash

Step 1: Wash, peel, and dice the potatoes into small cubes. Chop the chicken (or your choice of protein), bell peppers, onions, and mushrooms into bite-sized pieces. Wash and roughly chop the spinach.

Step 2: Heat a large skillet or cast-iron pan over medium heat with butter or oil. Add the potato cubes and cook, stirring occasionally, until golden and crispy on all sides (about 10–15 minutes).
Step 3: Add the onions, bell peppers, and mushrooms to the skillet. Cook until they are softened and lightly caramelized, about 5–7 minutes. Season with salt, pepper, and garlic powder if desired.

Step 4: Push the vegetables and potatoes to the side of the pan. Add the chicken pieces and cook until no longer pink and slightly golden. Then stir everything together for an even mix.
Step 5: Fold in the spinach and cook just until wilted, about 1–2 minutes. Taste and adjust seasonings as needed.

Step 6: Sprinkle cheddar cheese over the top. Cover the pan for a minute or two until the cheese melts and becomes gooey.
Step 7: Scoop the Market Hash onto plates. Optionally, serve with eggs, avocado slices, or hot sauce for a true First Watch-style breakfast experience.

First Watch Copycat Market Hash Recipe Tips
- For extra crispiness, parboil the potatoes for 5 minutes before sautéing.
- Use a cast-iron skillet if possible; it helps achieve that golden, caramelized crust.
- Customize your protein: try turkey, sausage, or tofu for a different twist.
- Don’t overcrowd the pan—cook in batches if needed for even browning.
- Add fresh herbs like parsley or chives at the end for a flavor boost.
Storing Instructions
- Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
- Reheat in a skillet over medium heat or in the air fryer for best crispiness.
- Avoid microwaving if you want to keep the potatoes crispy—they get soggy.
