This air fryer chicken piccata gives you golden, Parmesan-crusted chicken cutlets and a bright lemon-butter caper sauce in about 30 minutes, with a spritz of oil instead of a skillet full of it. The chicken cooks at 370°F while the sauce simmers on the stove, so both are ready at the same moment.

Ingredients Needed

Full quantities are in the recipe card below.

Chicken breasts, egg, flour, Parmesan, lemon, butter, broth, and capers measured out for chicken piccata
  • Boneless, skinless chicken breasts (2 large, about 1.5 lb). Halved horizontally and pounded thin, two breasts give four cutlets.
  • Garlic powder, salt, and black pepper. Seasoned directly on the chicken before dredging.
  • Egg and lemon juice. The wet dredge; the lemon in the egg carries flavor into the crust.
  • All-purpose flour and grated Parmesan. The dry dredge. Grate Parmesan from a wedge; pre-shredded won’t stick as well. Use a 1:1 gluten-free flour blend for a gluten-free version.
  • Dried parsley. Mixed into the flour for color and flavor.
  • Unsalted butter, chicken broth, lemon juice, and capers. The piccata sauce. Capers are in a jar near the olives; drain them before adding.

How to make chicken piccata in the air fryer

Raw chicken breasts halved and pounded thin, seasoned with garlic powder, salt, and pepper

Step 1: Prep the cutlets. Slice each breast in half horizontally. Lay the pieces between two sheets of plastic wrap and pound to 1/4-inch thickness with a meat mallet or rolling pin. Season both sides with garlic powder, salt, and pepper.

Step 2: Set up two bowls. In the first, whisk the egg, 2 tablespoons lemon juice, and garlic powder. In the second, stir together the flour, Parmesan, parsley, and salt.

Step 3: Dredge. Dip each cutlet in the egg, let the excess drip off, then press into the flour mixture to coat both sides. Lay the cutlets in a single layer in the air fryer basket (spray the basket or use parchment first). Spritz the tops lightly with oil. Work in two batches if they overlap.

Step 4: Air fry at 370°F for 12 to 15 minutes. Flip halfway through and spritz the second side. The chicken is done when a thermometer reads 165°F in the thickest part and the coating is golden.

Step 5: Make the sauce while the chicken cooks. In a small saucepan over medium-low heat, melt the butter with the chicken broth and 3 tablespoons lemon juice. Stir in the drained capers and simmer 3 to 4 minutes until slightly reduced.

Step 6: Serve. Plate the cutlets and spoon the lemon caper butter sauce over the top. Add lemon slices and fresh parsley if you have them.

Tips for crispy air fryer chicken piccata

  • Pound evenly. Uneven cutlets cook unevenly; aim for a consistent 1/4 inch so the thin edges don’t dry out while the center finishes.
  • Don’t skip the oil spritz. Flour with no fat stays pale and powdery. A few seconds of spray on each side is all it takes, still a fraction of what pan-frying uses.
  • Single layer only. Overlapping cutlets steam instead of crisp. Two batches beats one crowded basket.
  • Sauce the plate, not the basket. Pour the sauce over the chicken right before serving so the crust stays crisp.
  • Add the sauce’s pan juices to pasta. If you’re serving over noodles, toss them in the sauce first and set the chicken on top.

Variations

  • Chicken Francese. Leave out the capers and add 1/4 cup dry white wine to the sauce.
  • No-breading piccata. Skip both dredges, spritz the seasoned cutlets with oil, and air fry 10 to 12 minutes. Lighter, and naturally gluten-free.
  • Keto piccata. Replace the flour with crushed pork rinds or almond flour. Cook time stays the same.
  • Chicken thighs. Boneless thighs work; pound them flat and add 2 to 3 minutes.

What to serve with air fryer chicken piccata

Buttered noodles or angel hair are the classic pairing because they soak up the sauce. For something lighter, try Air Fryer Roasted Vegetables, Air Fryer Smashed Potatoes, Air Fryer Mashed Potatoes, steamed rice, or sautéed spinach. A dry white wine (Pinot Grigio, Sauvignon Blanc, unoaked Chardonnay) matches the lemon.

Storage and reheating

  • Refrigerate chicken and sauce in separate airtight containers for up to 3 days.
  • Freeze cooked, cooled cutlets for up to 2 months. Freeze the sauce separately and thaw both overnight in the fridge.
  • Reheat cutlets in the air fryer at 350°F for 4 to 5 minutes to re-crisp. Warm the sauce in a small pan over low heat and spoon over just before serving. Skip the microwave for the chicken; it softens the crust.

FAQ

How long does chicken piccata take in the air fryer? 12 to 15 minutes at 370°F for 1/4-inch cutlets, flipping once. Always check for 165°F internal temperature.

Can I make air fryer chicken piccata gluten-free? Yes. Use a 1:1 gluten-free flour blend or almond flour in the dry dredge. Everything else stays the same.

Can I bread the chicken ahead of time? Yes. Dredge the cutlets, lay them on a parchment-lined tray, cover, and refrigerate up to 8 hours. Air fry straight from the fridge, adding a minute or two.

Why isn’t my coating crispy? Usually the cutlets were crowded or weren’t sprayed with oil. Cook in a single layer and spritz both sides.

Can I make the sauce in the air fryer? No. The sauce needs a saucepan; it takes 5 minutes on the stove while the chicken cooks.

Does this work with chicken thighs? Yes. Pound boneless thighs flat and add 2 to 3 minutes. They’ll be juicier but less crisp than breasts.

Ingredients

Chicken

  • 2 large boneless, skinless chicken breasts (about 1 1/2 lb), halved horizontally
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil spray

Egg mixture

  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon garlic powder

Flour mixture

  • 1/2 cup all-purpose flour, or 1:1 gluten-free blend
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon dried parsley
  • 1/2 teaspoon salt

Lemon caper butter sauce

  • 3 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons capers, drained

To serve (optional)

  • Lemon slices and chopped fresh parsley

Instructions

  • Spray the air fryer basket with oil or line with parchment. Place the chicken halves between plastic wrap and pound to 1/4-inch thickness. Season both sides with garlic powder, salt, and pepper.
  • In a shallow bowl, whisk the egg, 2 tablespoons lemon juice, and 1/2 teaspoon garlic powder. In a second bowl, combine the flour, Parmesan, parsley, and 1/2 teaspoon salt.
  • Dip each cutlet in the egg mixture, then press into the flour mixture to coat both sides. Arrange in a single layer in the basket and spritz the tops with oil.
  • Air fry at 370°F for 12 to 15 minutes, flipping and spritzing the second side halfway through, until golden and the internal temperature reaches 165°F. Repeat with any remaining cutlets.
  • While the chicken cooks, melt the butter in a small saucepan over medium-low heat. Add the broth, 3 tablespoons lemon juice, and capers. Simmer 3 to 4 minutes until slightly reduced.
  • Spoon the sauce over the chicken and serve with lemon slices and parsley.

Equipment

  • Meat mallet or rolling pin
  • Plastic wrap

Notes

  • Cook in two batches if the cutlets overlap; crowding prevents crisping.
  • For keto, swap the flour for 1/2 cup crushed pork rinds or almond flour.
  • Store chicken and sauce separately up to 3 days; reheat the chicken in the air fryer at 350°F for 4 to 5 minutes.
