Recipe Tips

  • Use lean ground beef: Choose an 80/20 mix of ground beef for a juicy meatloaf, but feel free to adjust the fat content based on your preferences.
  • Customize the spice level: If you prefer a milder flavor, reduce or omit the cayenne pepper in both the meatloaf and the glaze. For extra heat, add more hot sauce or cayenne.
  • Breadcrumb alternatives: For a gluten-free version, swap out regular breadcrumbs for gluten-free breadcrumbs or crushed gluten-free crackers.
  • Let the meatloaf rest: After cooking, allow the meatloaf to rest for 5-10 minutes before slicing to help retain its juices and prevent it from falling apart.
  • Make it ahead: You can prepare the meatloaf mixture and the glaze in advance, refrigerate overnight, and cook it the next day for a quicker meal.
