- As usual, clean and prepare the chicken (remove the extra parts from inside the chicken and wash with water, salt and pepper).
- Put the chicken inside the Instant Pot (I added the lemon and onion into the cavity, for extra flavor)
- In a small bowl mix together the sauce ingredients.
- Turn on your Instant Pot to preheat on the sauté setting, and coat the chicken with the half of the sauce.
- Place the chicken breast side down, in the Instant Pot. Then coat the bottom side of the chicken with the other 1/2 of the sauce. The chicken should saute for about 5 minutes, until the breast side is nice and browned Then turn the chicken over, let brown for about 2 to 3 minutes. Return the breast side up, and remain there. Add your chicken broth
- Set the timer (manual) for 25 minutes. Allow the pressure to release naturally
- Remove the lid and let rest for about 5 minutes.
Pro Tips:
Twine: You do not need to tie the legs together, however, if the whole chicken does not fit, you may want to tie the two legs together, so the chicken fits inside the Instant Pot.
Size of Chicken: The chicken size that will fit into your Instant Pot, will depend on the size of the Instant Pot. Larger Instant Pots will fit larger whole chickens.
Internal Temperature: The internal temperature of the chicken should reach 165 degrees F when fully cooked. Remember to check the thickest part of the chicken, before removing the chicken from the Instant Pot.
BBQ Sauce: Any BBQ sauce will work for this recipe, I always use my favorite, (Sweet Baby Rays, but any sauce will work)
Water: You can use water in place of the chicken broth, however, I felt that the broth gives the chicken more flavor.
How To Store Leftover Chicken:
Leftover chicken can be a challenge to store. It can get dry and rubbery if it’s not stored properly. Here are some tips to help you keep your leftovers fresh. Leftover chicken is great for salads, sandwiches, tacos, or just eating straight up! So don’t let it go to waste – here are some tips to help you store it properly.
First, try to store your leftover chicken in an airtight container. This will help keep the moisture in. If you don’t have an airtight container, you can wrap the chicken in plastic wrap or aluminum foil.
Second, place the leftover chicken in the fridge as soon as possible. The cooler temperature will help keep the meat from drying out.
