Cucumber Salad — Cucumber salad is one of my favorite light summer meals. It’s healthy, fresh, and delicious! Cucumbers are especially refreshing in the summertime when it’s hot outside and you want to eat something that won’t weigh you down. They’re also very easy to prepare – just slice them up with some onions, salt, pepper, vinegar, and olive oil!

This is the perfect side dish for several meals, and I love pairing this up with my air fryer ribs or even air fryer fried chicken As it provides a great contrast against the heavy flavor of those dishes.
