How to Make Cowboy Butter Steak and Potatoes

Step One: Pat the steak dry with paper towels. Season both sides generously with salt, pepper, steak seasoning, and garlic powder. Let the steak sit at room temperature for about 15 minutes while you cube the potatoes.

Step Two: Heat olive oil in a skillet over medium-high heat. Sear the steak for 3–4 minutes per side for medium-rare (adjust time based on thickness). Add butter, garlic, green onions, and pimentos to the pan. Tilt the pan and spoon the melted butter mixture over the steak for 1–2 minutes until golden and flavorful.

Step Three: Remove the steak from the pan and let it rest on a plate. Don’t clean the pan—leave the flavorful drippings for the potatoes.

Step Four: Add the cubed potatoes to the skillet with the reserved butter and pan drippings. Cook over medium heat, stirring occasionally, for 12–15 minutes or until golden and fork-tender. Season with more steak seasoning, salt, and parsley if needed.
Step Five: Slice the rested steak against the grain. Return the slices to the pan, nestling them among the potatoes. Spoon any remaining butter over the top, garnish with parsley, and serve immediately.

Recipe Tips and Modifications
✅ Tips for Success:
- Room Temp Steak: Letting the steak sit at room temp ensures even cooking and better sear.
- Don’t Skip the Rest: Resting the steak helps retain juices—slice too soon and they’ll all run out.
- Tilt the Pan: Tilting helps you spoon the cowboy butter mixture over the steak for max flavor.
- Use a Cast Iron Skillet: It holds heat well and gives the best crust on steak and crispy potatoes.
- Monitor Potato Size: Smaller cubes cook faster and crisp better—aim for uniform size.
🔁 Easy Modifications:
- Swap the Steak: Use sirloin, flank, or even filet mignon instead of ribeye or NY strip.
- Make It Spicy: Add red pepper flakes or a spoonful of hot sauce to the butter mixture.
- Add Veggies: Toss in mushrooms, bell peppers, or asparagus with the potatoes.
- Dairy-Free Option: Use dairy-free butter or olive oil for the cowboy butter.
- Fresh Herbs Twist: Sub parsley with thyme or rosemary for a different flavor profile.

Cowboy Butter Steak and Potatoes Recipe Faqs
Can I use a different cut of steak? Yes! Ribeye and New York strip are flavorful, but sirloin, filet mignon, or even flat iron steak work well too. Just adjust the cooking time based on thickness.
What are pimentos and can I substitute them? Pimentos are sweet red peppers with mild flavor. You can substitute with roasted red peppers or even chopped cherry peppers if you like a bit of heat.
Do I need Kinder’s Butter Steak Seasoning? No, but it adds great flavor. If you don’t have it, mix garlic powder, onion powder, smoked paprika, and a pinch of dried herbs as a quick substitute.
Can I make this recipe in the air fryer or oven? You can cook the steak in the air fryer or oven, but for the best cowboy butter flavor and those golden pan drippings, stovetop is ideal. The potatoes can be roasted in the oven if needed.
What should I serve with this dish? It’s a complete meal on its own, but crusty bread, a side salad, or grilled veggies pair perfectly with the rich flavors of the steak and butter.
How do I store and reheat leftovers? Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium-low heat to keep everything tender and flavorful.
