Heat olive oil in a skillet over medium-high heat. Sear the steak for 3–4 minutes per side for medium-rare (adjust based on thickness). Add butter, garlic, green onions, and pimentos. Tilt the pan and spoon the melted butter over the steak for 1–2 minutes until golden and flavorful.
Transfer the steak to a plate to rest. Do not clean the skillet—those flavorful drippings are key for the potatoes.
Add cubed potatoes to the skillet with reserved butter and drippings. Cook over medium heat, stirring occasionally, for 12–15 minutes or until golden and fork-tender. Season with more Kinders, salt, and chopped parsley if needed.
Slice the rested steak against the grain. Return to the pan, nestling slices into the potatoes. Spoon remaining butter over the top, garnish with parsley, and serve warm.
