Heat a large saucepan or Dutch oven over medium-high heat. Melt the butter in the pan and add the minced garlic. Cook for 30 seconds, then add the milk and cream of chicken soup. Whisk to combine, then place chicken breast inside—cover and cook for 15 minutes.

Chop broccoli florets into ¼” pieces.  Remove the chicken from the pan and place it in a large mixing bowl. Add shredded cheese to the pan and stir until melted.

Preheat the air fryer to 380 degrees F, air fryer setting, for 5 minutes. Roll out crescent roll dough. Separate into the pre-cut triangles. Fuse 2 triangles to form a rectangle and pinch the seams to seal. Use a pizza cutter and cut each rectangle in half to make two squares.  Add about  ⅓ cup of chicken mixture to the center of each square. Gather the edges over the filling and pinch to seal. Form into a ball.

Pro Tips For Air Fryer Broccoli Cheddar Chicken Bites

  • Chicken: If you do not want to use boneless, skinless chicken breasts, another option would be to use boneless, skinless chicken thighs. You can also use rotisserie chicken and then shred it.
  • Size: Try to make all the chicken bites the same size so they all cook up at about the same time.
  • Topping: For even more flavor, brush the crescent rolls as they bake with melted butter and garnish with some freshly grated parmesan cheese.
  • Crowding: For best results, do not crowd your air fryer basket. Otherwise, the dough will not get fully cooked. Be sure to leave plenty of space around the rolls so they cook up to perfection.

Can You Double This Recipe

Yes, if you are looking for a great appetizer or a crowd-pleaser, this recipe can easily be doubled. You will have to cook the Broccoli Cheddar Chicken Bites in batches, but the recipe will work precisely the same whether you double or triple the recipe.

How Many Will This Recipe Make

Depending on how much filling you use, you can average about 12 to 15 chicken bites per chicken bite.

Can I Freeze These?

I have not found that the biscuit dough freezes well, so for best results, I would cook them when you want to eat them.

But you can make, cook, and then freeze them. Cook them per the recipe directions, then place them onto a cooking tray, place the baking tray into the freezer, and freeze until frozen solid. Then, remove and place them into a freezer bag.

When you want to eat some of them, place them frozen into the air fryer and cook for 7 to 10 minutes at 400 degrees F, air fryer setting. They will last in the freezer for about 1 to 2 months.
