How to Make Slow Cooker Pumpkin Bread

Step 1: Prep the crock
Line it with a slow cooker liner or parchment, or grease it thoroughly with baking spray. If you’re using a loaf pan, coil a long sheet of aluminum foil into a rope and bend it into a ring on the bottom of the crock. The pan has to sit above the crock floor or the bottom of your bread will scorch.
Step 2: Whisk the dry ingredients
Flour, baking soda, baking powder, salt, and all four spices in one bowl. Whisk a full fifteen seconds — this is the only aeration the batter gets.
