I love my new Ninja Foodi, not only is it a pressure cooker, but it’s an air fryer as well.

WHAT IS A NINJA FOODI?

This year, a Ninja Foodi is so popular because it combines two appliances: the Pressure Cooker and an Air Fryer. It is very much like the new Instant Pot Lid. It changes out the lid for each function, one lid for the Pressure Cooker, and one lid for the Air Fryer.

How To Make Ninja Foodi Shrimp Risotto

This is such an easy recipe to make Shrimp Risotto, starting with the roasted onions and garlic, which give it so much flavor.

Here Is How I Made Risotto In the Ninja Foodi:

Start by sauting the onions in olive oil, for a few minutes, just until they are translucent, and tender. Then add the rice and minced garlic, and saute for a couple of minutes, until the rice is toasted.

Add the wine, and mix well. You really want to get all of the little bits of rice, onion, and garlic that are stuck to the bottom of the pan. Then add your chicken broth, cheese, salt, and black pepper. Mix well. Add your pressure cooker lid and set the time to 8 minutes. (High) When the time is up, do a release by turning the vent open.

Add the shrimp, and press the sear/saute function on the Ninja Foodi. Saute for a couple of minutes, until the shrimp is opaque.

RISOTTO

If you are not familiar with risotto, it’s cream-based rice that originates from Italy.

Traditionally risotto is slow-cooked for hours, but with the Instant Pot, the hours become minutes, and you still get a delicious rice dish at the end of the process.

Risotto can be made from any rice, but the long-grain rice tends not to stick together, which is great for a regular rice dish, but not for real risotto. For the authentic risotto, you need short-grain rice, such as arborio or carnaroil rice.

Ingredients 

  • 2 tablespoons olive oil
  • 1/2 cup onions, diced
  • 2 teaspoon garlic, minced
  • 1/2 cup white wine
  • 1 1/2 cups arborio rice
  • 3 1/2 cups chicken broth or chicken stock
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup Parmesan Cheese, shredded
  • 1 pound shrimp, thawed or fresh

Instructions

  • Start by sauteing the onions in olive oil for a few minutes, just until they are translucent and tender.
  • Then add the rice and minced garlic, and saute for a couple of minutes until the rice is toasted.
  • Add the wine,  and mix well. You really want to get all of the little bits of rice, onion, and garlic that are stuck to the bottom of the pan. Then add your chicken broth, cheese, salt, and black pepper. Mix well. Add your pressure cooker lid and set the time to 8 minutes. (High) When the time is up, do a release by turning the vent open.
