If there’s one plate that sums up Denny’s, it’s Country Fried Steak & Eggs. A golden, crackly breaded steak smothered in peppery country gravy, two eggs cooked your way, and a pile of hash browns on the side. It’s the order that gets you through a road trip and the one you crave at 10 p.m. on a Sunday.

This copycat Denny’s country fried steak recipe gives you the whole plate at home, and the steak cooks in the air fryer, so there’s no pot of oil to babysit and no greasy stovetop to clean. The crust still shatters, the cube steak stays tender, and the gravy is the thick, black-pepper-flecked kind that clings to every bite. Start to finish it’s about 35 minutes, which is faster than most Denny’s wait times on a weekend morning.
Why This Recipe Works
- Air fryer crust that actually crisps. A double dredge, a short rest, and a generous spray of oil give you a crust that holds up under gravy instead of going soft.
- Real diner country gravy. Butter, flour, whole milk, and a lot of black pepper. That’s the Denny’s flavor. No packet, no shortcuts.
- The full plate. Steak, gravy, eggs, and hash browns, timed so everything hits the table hot at once.
- Less grease, same comfort. You get all the crunch of deep-fried steak with a fraction of the oil.

What Is Country Fried Steak?
Country fried steak is a thin, tenderized beef cutlet (usually cube steak) that’s breaded like fried chicken and pan- or deep-fried until golden. Denny’s serves it with white country gravy, two eggs, hash browns, and your choice of bread. It’s a close cousin of chicken fried steak, and the names are often used interchangeably. The main difference at most diners is the gravy: country fried steak gets white pepper gravy, while chicken fried steak sometimes comes with brown gravy. Denny’s goes with white, and so does this recipe.
Ingredients

For the steak
- Cube Steak: Tenderized beef round that cooks fast and stays juicy.
- All-Purpose Flour: Builds the thick, craggy crust that crisps beautifully.
- Kosher Salt: Seasons the breading and brings out the beef flavor.
- Black Pepper: Adds classic diner bite to the seasoned flour coating.
- Garlic Powder: Gives the breading savory depth without burning in the air fryer.
- Onion Powder: Rounds out the seasoning with mild, sweet onion flavor.
- Smoked Paprika: Adds golden color and a subtle smoky diner flavor.
- Cayenne Pepper: Optional pinch of heat that wakes up the crust.
- Eggs: Bind the buttermilk wash so the flour coating sticks.
- Buttermilk: Tenderizes the steak and adds tang to the breading.
- Hot Sauce: Optional splash that makes the crust taste like a diner.
- Cooking Spray: Helps the flour brown and crisp in the air fryer.
For the country gravy
- Butter: Creates the rich base for a creamy white gravy.
- All-Purpose Flour: Thickens the gravy into a spoon-coating consistency.
- Whole Milk: Makes the gravy rich, creamy, and true to Denny’s.
- Kosher Salt: Balances the richness and sharpens the gravy flavor.
- Coarsely Ground Black Pepper: The signature flecks and bite of country gravy.
- Garlic Powder: A pinch adds savory background flavor to the gravy.
For serving
- Eggs: Cooked to order, sunny-side up or over easy.
- Hash Browns: Crispy shredded potatoes that finish the classic Denny’s plate.
- Toast or Biscuits: Perfect for soaking up every last drop of gravy.
Ingredient Notes
- Cube steak is beef round that’s been run through a tenderizer. It’s inexpensive and already the right thickness. If yours are thicker than ½ inch, pound them thinner between two sheets of plastic wrap.
- Buttermilk adds tang and helps tenderize. If you don’t have it, stir 2 teaspoons of vinegar or lemon juice into ¾ cup of regular milk and let it sit for 5 minutes.
- Whole milk makes a richer gravy. Two percent works, but skip skim; the gravy won’t thicken the same way.
- Coarsely ground black pepper is what gives Denny’s gravy its look and bite. Fine pepper disappears into it.
How to Make Air Fryer Country Fried Steak

Step 1: Set up the dredging station. Pat the cube steaks dry with paper towels. In a shallow dish, whisk together the flour, salt, pepper, garlic powder, onion powder, paprika, and cayenne. In a second shallow dish, whisk the eggs, buttermilk, and hot sauce.

Step 2: Double dredge. Press each steak into the seasoned flour, coating both sides. Dip it into the buttermilk mixture and let the excess drip off. Return it to the flour and press the coating on firmly with your fingers. You want a thick, craggy layer of flour; those rough bits become the crunch.

Step 3: Rest the breaded steaks. Set the steaks on a wire rack or baking sheet for 10 to 15 minutes. This lets the flour hydrate and bond to the meat so it doesn’t flake off in the air fryer. Use this time to start the gravy.
Step 4: Preheat the air fryer. Set it to 400°F for 3 to 5 minutes. Spray the basket well.

Step 5: Air fry. Spray both sides of each steak generously with oil. Any dry flour patches will stay white and dusty, so don’t be shy. Place the steaks in a single layer without overlapping (cook in two batches if needed). Air fry at 400°F for 6 minutes, flip, spray the second side, and cook another 5 to 6 minutes until deep golden and crisp. Internal temperature should read at least 145°F.
Step 6: Keep warm. Transfer cooked steaks to a wire rack in a 200°F oven while you finish the second batch and cook the eggs.

How to Make Denny’s-Style Country Gravy

Step 1: In a medium saucepan or skillet, melt the butter over medium heat. Whisk in the flour and cook, stirring constantly, for 1 to 2 minutes until it smells nutty and looks like wet sand. Don’t let it brown; country gravy stays pale.
Step 2: Pour in the milk slowly, about ½ cup at a time, whisking after each addition until smooth. Adding it gradually is the single best way to avoid lumps.

Step 3: Bring to a gentle simmer and cook, stirring often, for 4 to 6 minutes until the gravy coats the back of a spoon. Stir in the salt, pepper, and garlic powder. Taste and add more pepper if you want it to look and taste like the diner version (you probably do).
Step 4: If it thickens too much while it sits, whisk in a splash of milk before serving.

Cooking the Eggs and Hash Browns
While the second batch of steak cooks, fry the eggs in a nonstick skillet with a little butter. Sunny-side up or over easy are the diner classics, but scrambled works too. Season with salt and pepper.
For hash browns, spread frozen shredded hash browns in a single layer in the air fryer basket (or a second air fryer if you have one), spray with oil, and cook at 400°F for 12 to 15 minutes, flipping halfway, until golden and crisp. Season with salt.
Plating It Like Denny’s
Put a steak on the plate, ladle gravy over the top so it runs down the sides, and add a little extra black pepper. Set two eggs next to it, hash browns on the side, and toast or a biscuit on the edge. That’s the plate.
Tips for the Best Country Fried Steak
- Dry steak, thick crust. Moisture on the surface of the meat makes the flour slide off. Pat it dry first.
- Press the flour on. After the second dredge, physically push the coating into the steak. Loose flour falls off; pressed flour crisps.
- The rest is not optional. Ten minutes on the rack is the difference between a crust that sticks and one that peels off in sheets.
- Spray more than you think. Dry flour won’t crisp or brown in an air fryer. Every visible patch of white flour needs oil.
- Don’t crowd the basket. Overlapping steaks steam instead of crisp. Two batches is fine.
- Make the gravy first. It holds well over low heat. The steak doesn’t.

Variations
- Stovetop method. Heat ¼ inch of vegetable oil in a cast iron skillet over medium-high heat. Fry the steaks 3 to 4 minutes per side until golden. Drain on a rack, not paper towels, to keep the crust crisp.
- Spicy. Double the cayenne in the flour and add a few dashes of hot sauce to the finished gravy.
- Country fried steak dinner. Skip the eggs and serve with mashed potatoes and green beans for the Denny’s dinner version.
- Gluten-free. Use a 1:1 gluten-free flour blend for both the breading and the gravy. Add 2 tablespoons of cornstarch to the breading for extra crunch.
- Chicken fried chicken. Swap the cube steak for pounded chicken breast. Same breading, same gravy, cook to 165°F.
What to Serve With Country Fried Steak & Eggs
Hash browns are the classic, but home fries or breakfast potatoes are just as good. Round out a full Denny’s-style breakfast with a stack of buttermilk pancakes, fluffy biscuits, or a slice of Texas toast to mop up the gravy. Something fresh on the side, like sliced tomatoes or fruit, helps balance a heavy plate.

Storage and Reheating
- Refrigerate: Store steak and gravy in separate airtight containers for up to 3 days.
- Reheat the steak: Air fry at 375°F for 4 to 6 minutes until hot and crisp again. Skip the microwave; it turns the crust soggy.
- Reheat the gravy: Warm on the stove over low heat, whisking in a splash of milk to loosen it.
- Freeze: Cooked, cooled steaks freeze well for up to 2 months. Reheat from frozen in the air fryer at 375°F for 10 to 12 minutes. Gravy can separate when frozen, so make it fresh.
Frequently Asked Questions
Is country fried steak the same as chicken fried steak? Nearly. Both are breaded, fried cube steak. The difference is mostly regional and comes down to gravy: country fried steak usually gets white pepper gravy, while chicken fried steak sometimes gets brown gravy. Denny’s serves theirs with white country gravy.
Can I use frozen country fried steak? Yes. If you’re short on time, our Air Fryer Frozen Country Fried Steak shows you exactly how to cook the store-bought patties. Top them with this homemade gravy and you’re most of the way to the Denny’s plate.
Why did my breading fall off? The steak was wet, the coating wasn’t pressed on, or the steaks didn’t rest before cooking. Pat dry, press firmly, and give them 10 minutes on a rack.
Why is my crust pale and dusty? Not enough oil. In an air fryer, flour only browns where it touches fat. Spray both sides generously and hit any white spots after flipping.
Why is my gravy lumpy? The milk went in too fast. Add it in small amounts and whisk until smooth before adding more. If it’s already lumpy, whisk hard or pour it through a fine strainer.
What cut of beef is best? Cube steak. It’s already tenderized, thin, and affordable. If you can only find round steak, pound it to ½ inch thick with a meat mallet.
