How to Make Buc-ee’s Beaver Tails (Step by Step)

Step 1: Prep

Preheat the oven to 375°F. Line a large baking sheet with parchment paper.

Step 2: Make the cinnamon filling

In a small bowl, stir together the softened butter, brown sugar, cinnamon, and salt until it forms a thick, spreadable paste.

Step 3: Fill and roll

Unroll one can of crescent dough onto a lightly floured surface and gently press it into a rectangle about 8 x 12 inches. If you’re using perforated dough, pinch the seams together first. Spread half the cinnamon filling evenly over the surface, leaving a ½-inch border. Starting from a long side, roll the dough into a tight log. Repeat with the second can.

Step 4: Cut and flatten

Cut each log in half so you have 4 pieces. Place each piece seam-side down on the baking sheet, then press it with your palm and roll it with a rolling pin into a long, flat oval about 8 inches long and ½ inch thick. This is the “tail” shape. Space them at least 2 inches apart.
