Lasagna Fritta is a lasagna noodle that gets stuffed with cheese, rolled up, battered, and air fried till the outside is crunchy. This is a great appetizer or even dinner option for those who love lasagna. The crispy coating is so delicious when paired with marinara sauce.
How To Make Air Fryer Olive Garden Copycat Lasagna Fritta
With a few simple steps, you can have a great and easy dinner or appetizer, perfectly cooked with the help of the air fryer.
Ingredients Needed
- Lasagna Noodles
- Ricotta Cheese
- Shredded Mozzarella Cheese
- Eggs
- Parsley
- All-Purpose Flour
- Panko Bread Crumbs
- Italian Seasoning
- Olive Oil Spray
- Marinara Sauce
Simple Directions
Cook the lasagna noodles as directed on the package. And then drain the noodles, rinse with cold water.
Place two noodles down on a flat surface, and make an addition symbol, add a scoop of ricotta cheese onto the center of the noodles.
Set up your dredging stations, you will have three:
- Flour in One Bowl
- Panko Breadcrumbs and Italian Seasonings in another bowl
- Shredded Mozzarella, parsley, and eggs in another bowl.
Dip the foldest lasagna noodles into the flour mixture, then the egg mixture, and then the Panko Bread Crumb mixture. As you coat them, place them on a greased baking sheet.
Place the breaded lasagna noodles into the freezer for about 2 hours until they are completely frozen.
Spray your air fryer basket with olive oil, and then preheat your air fryer for 5 minutes at 400 degrees F.
Set the frozen Lasagna Frittatas into the air fryer basket, spray GENEROUSLY with olive oil spray. Air fry for 10-15 minutes at 400 degrees F, flipping halfway and spraying again with olive oil.
Does This Recipe Have Meat
My Fritta does not have meat. I wanted to really zone into Olive Garden and prepare this appetizer the best way I can. A carb-loaded appetizer that is full of flavor and great for entertaining weeknight snacking, etc.
Tips for Making Fritta
- Make sure that you cook your pasta, then allow it to cook for a bit before assembling.
- Do not overlap the Fritta in the air fryer. Otherwise, you run into uneven spots.
- Panko is what I used, but you can reach for classic bread crumbs if you need them.
- This appetizer is best served fresh. Otherwise, it loses the crunchy texture.
Can I Add Meat
So this version, I did not add meat. If you want to add meat, go right ahead. Just cook it up and then add a bit to the filling. Ground beef or even sausage and ground beef would make a great pairing of flavor. Feel free to choose if you want to add meat.
Make sure to drain off grease from the meat. Then you can add a bit to each roll.
How to Prevent Lasagna Frittas From Sticking To Air Fryer Basket Or Tray
You will want to use an oil spritzer with olive oil or even avocado oil. It is never recommended to use the aerosol cooking spray to cause the coating to break apart and rust your tray or basket.
You could also use a brush to wipe the oil on if you don’t own an oil mister that you fill yourself.
Can I Pan Fry These Instead
If you don’t want to use your air fryer, you will prepare the pasta and bread the same way. Then heat oil in a heavy-duty pan on the stove, and pan-fry it until it is golden brown on both sides.
Ensure the oil is hot when you place it in, or you will find the breading begins to fall apart.
Do Lasagna Frittas Store Well
Like any breaded item, you will find it does not refrigerate the best. The coating will become softer as it is stored in the fridge. One way to heat it is in the air fryer. It will help provide a crispy texture again. Otherwise, if you do the microwave, it will stay soggy in texture.
How To Store Leftover Lasagna Fritta
The best way to store these is to let them cool to room temperature, then place the uneaten portion into an airtight container. SEt the container into the refrigerator; it will be best if eaten between 1 to 2 days.
To Reheat: Either use a skillet or the air fryer and spray the air fryer basket with olive oil and set the temperature to 350 degrees F, for 3 to 5 minutes. Remove when hot.
What To Serve With Air Fryer Olive Garden Copycat Lasagna Fritta
While you can eat this alone, I usually serve mine along with a huge salad and a side of Copycat Olive Garden Breadsticks.

I’d like to make this but need more information. Recipe says it serves 4 and calls for a box of lasagna. You use 2 noodles per Fritta. So how many fritta are a serving, 1 or 2? I ask because a box of lasagna has more than 8 noodles in it.
Also, it would be helpful if you showed how to fold the noodles around the ricotta.
