Air Fryer, Cherry Cheesecake Cupcakes

This is one of my favorite recipes, and with the holidays coming up, I really wanted to make another batch of Air Fryer Cherry Cheesecake Cupcakes.

This is truly just a fun baking project, and in the end, you get an amazing and delicious dessert. So, if you are like me, and love cheesecake this is a great recipe, and it’s so awesome to serve around the holidays. What is nice, if that you do not even need to serve them, everyone just grabs one, which makes clean up a breeze.

While this might look super complicated it’s actually really easy to make, and you only need a few ingredients.

Cherry Cheesecake Cupcakes

Ingredients Needed:

GRAHAM CRACKER CRUST:

  • 1 cup graham cracker crumbs
  • 3/4 cup melted butter
  • 3 tablespoon sugar

CHEESECAKE:

  • 8 ounces room temperature cream cheese
  • 3/4 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract

Simple Directions:

  1. Start by placing your graham crackers in a ziplock bag, and then use a rolling pin to crush them.
  2. Then in a medium-size bowl, add 1 cup of the crushed graham crackers, the melted butter, and sugar.
  3. Mix well. This will become your bottom crust.
  4. Press the mixture in either a cupcake tin or you can use muffin liners, I did both.
  5. Then in a mixing bowl mix together the cream cheese, sugar, eggs, and vanilla extract.
  6. Mix until smooth.
  7. Then fill the muffin tin cup, to almost the top with the filling.
  8. Place in the air fryer basket or tray, and set the temperature to 330 F for 10 minutes, after 10 minutes check and see if the crust is firm, if not add another 5 minutes
  9. let cool slightly, and then scoop the cherry pie filling on top.
  10. Plate, serve, and enjoy!

Tips For Making the Best Air Fryer Cheesecake

  1. Make sure that you start with room temperature cream cheese, otherwise you will have lumps in your cheesecake.
  2. Try not to over mix the filling, once the filling is smooth, stop mixing.
  3. Always let the cheesecake cool to room temperature, before chilling. If you do not chill, it will be soup. The cream cheese filling needs the cold to firm up.

How Do You Store Cheesecake?

I highly recommend that you keep these in the refrigerator. The greatest thing is since they are cupcakes, just line them on a plate, and place the plate of uneaten ones back in the refrigerator.

Can I Freeze These?

Unfortunately, this recipe does not freeze well.

These are absolutely fabulous. They are so easy to make in your air fryer, and they are traditional cheesecake with the graham cracker crust and cheesecake filling. Sometimes these are referred to as cheesecake bites, or even fried cheesecake!
