Air fryer rattlesnake bites are bite-sized, 1- to 1½-inch rounds of pepper jack, Monterey Jack, cream cheese, and diced jalapeño, breaded and air fried until the outside crunches and the middle turns molten. They’re my at-home take on the Texas Roadhouse appetizer, made with a fraction of the oil and served with a homemade Cajun horseradish sauce.

The one step you can’t skip is the freezer. Frozen cheese balls hold their shape in the hot basket; soft ones slump and leak. Plan on about 10 minutes of hands-on work, at least 1 hour of freezing, and 6 to 8 minutes in the air fryer.
If you’ve been searching for a Texas Roadhouse snake bite recipe, this is the same appetizer. Most people just shorten the name.
Once I nailed my air fryer Texas Roadhouse fried pickles, these were the next starter on my list, and they disappeared even faster.

What are Texas Roadhouse Rattlesnake Bites?
They’re a fried cheese-and-jalapeño appetizer on the Texas Roadhouse starters menu, served with a Cajun horseradish dipping sauce. There’s no snake in them. The name comes from the jalapeño heat, not the ingredients.
The restaurant deep-fries them. This version gets its crunch from a seasoned crumb coat and a good coating of cooking spray in the air fryer instead.
They are not the same as jalapeño poppers. Poppers are whole or halved peppers stuffed with cheese. Rattlesnake bites flip that: the cheese is the bite, and the diced jalapeño is mixed through it.
Ingredients for copycat rattlesnake bites

- Pepper jack cheese: The main flavor. It’s already speckled with peppers, so it backs up the jalapeño heat.
- Monterey Jack cheese: Melts smoothly and mellows the pepper jack.
- Cream cheese (softened): The glue. It binds the shredded cheese so the balls hold tight.
- Jalapeños (seeded and finely diced): Leave some seeds in for more heat.
- All-purpose flour and cayenne: The first coat. A dry surface gives the egg something to grip.
- Eggs: Holds the crumbs on.
- Seasoned bread crumbs: The crunch. Panko works too and gets even crispier.
- Cooking spray: Not optional. Dry crumbs stay pale and dusty in an air fryer.
- Shred your own cheese. Pre-shredded bags are coated with anti-caking starch, which makes the mixture crumbly and harder to roll.
Swaps: Use all pepper jack for a spicier bite, or cheddar in place of the Monterey Jack for a sharper one. For a mild version, use pickled jalapeños with the brine squeezed out, or swap in diced roasted green chiles.
How to make air fryer rattlesnake bites

Step 1: Mix the filling. In a large bowl, stir together the shredded pepper jack, shredded Monterey Jack, softened cream cheese, and diced jalapeños until evenly combined.

Step 2: Roll tight balls. Scoop about 2 tablespoons at a time and roll into 1- to 1½-inch balls, squeezing firmly so there are no air pockets. You should get roughly 24.

Step 3: Freeze until solid. Set the balls on a parchment-lined baking sheet and freeze for at least 1 hour, until hard all the way through.

Step 4: Set up the breading station. Bowl one: flour and cayenne. Bowl two: eggs, beaten with a fork. Bowl three: bread crumbs.

Step 5: Bread the frozen balls. Roll each one in flour, then egg, then crumbs. For the most leak-proof shell, dip it in the egg and crumbs a second time.

Step 6: Spray well. Lightly spray the air fryer basket. Add the bites in a single layer with space between them, then spray the tops generously until no dry crumbs show.
Step 7: Air fry. Cook at 350°F for 6 to 8 minutes, gently turning them at the halfway point. They’re done when the coating is deep golden and the first one you test is melted in the center.
Step 8: Rest, then serve. Let them sit for 2 minutes so the cheese sets slightly, then serve with Cajun horseradish sauce.
Air fryers run hot or cool depending on the model, so check your first batch at 6 minutes. If you see cheese starting to break through, pull them right away.

Homemade Cajun horseradish sauce for rattlesnake bites
The Cajun horseradish dip is half the reason people order these, so make it while the cheese balls freeze. It’s creamy, tangy, and has a nose-clearing kick from the horseradish.
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 to 2 tablespoons prepared horseradish (not horseradish sauce)
- 1 teaspoon Cajun seasoning
- 1 teaspoon lemon juice
- ¼ teaspoon paprika
- A few dashes of hot sauce, to taste
Whisk everything together and chill for at least 30 minutes so the flavors blend. Start with 1 tablespoon of horseradish and add more after tasting. It gets stronger as it sits.

Tips to keep the cheese inside
Cheese blowouts are the most common problem with air fryer rattlesnake bites. Almost every one traces back to one of these:
- The balls weren’t frozen solid. Chilled isn’t enough. Give them the full hour, or longer if your freezer is packed.
- There were gaps in the coating. Any bare spot is where the cheese escapes. A second dip in egg and crumbs closes them.
- They cooked too long. Once the crust is golden, the inside is melted. An extra 2 minutes is often the difference between gooey and a flat puddle.
- The basket was crowded. Bites touching each other steam instead of crisp and can tear when you separate them. Cook in batches.
- They were breaded, then left out. Bread them straight from the freezer and get them into the air fryer while they’re still frozen. If you’re working in batches, keep the rest in the freezer.
Working with fresh jalapeños? Wear gloves, or wash your hands well before touching your eyes.
Make ahead, storing, and reheating
These are an ideal make-ahead appetizer, because the freezer is already part of the recipe.
- Make ahead: Bread the frozen balls, freeze them on the tray for another hour, then move them to a freezer bag. They keep for up to 3 months. Cook them straight from frozen as directed, with no thawing; long-frozen bites may need an extra minute.
- Leftovers: Cool completely, then refrigerate in an airtight container for up to 3 days.
- Reheating: Air fry at 350°F for 3 to 4 minutes until crisp and hot. Skip the microwave, which turns the crust soggy and melts the cheese out.

Rattlesnake bites FAQs
Do rattlesnake bites have snake in them? No. They’re cheese and jalapeño. The name refers to the spicy “bite.”
Is a Texas Roadhouse snake bite the same thing? Yes. “Snake bites” is just the shorthand many people use for Rattlesnake Bites.
What sauce comes with Texas Roadhouse Rattlesnake Bites? A Cajun horseradish sauce. The homemade version above is a close match in style: creamy, tangy, and sharp.
Can I make rattlesnake bites without freezing them? I don’t recommend it. Unfrozen cheese melts before the coating crisps, and you end up with empty shells. If you’re short on time, freeze for 1 hour and no less.
How spicy are they? Mild to medium with seeded jalapeños. Leave in some seeds or add cayenne to the filling for more heat.
Can I bake them in the oven? Yes. Bake the frozen, breaded, well-sprayed bites on a parchment-lined sheet at 400°F for about 10 to 12 minutes, until golden. Watch closely after 8 minutes.
What size air fryer do I need? Any basket or oven-style air fryer works. A 4- to 6-quart basket fits about 10 to 12 bites per batch with room for air to move.
