A thick batter. Bakery muffin batter is much stiffer than what most home recipes produce. It should mound on a spoon rather than pour. Thin batter spreads outward in the oven instead of climbing, and you end up with wide flat tops.
A hot start. Bake at 425°F for the first 8 minutes, then drop to 350°F without opening the door. That initial blast sets the outside edge while the leavening is still pushing upward, which is what forces the dome. A muffin baked at a steady 350°F the whole way will rise, but it won’t peak.
Filling the cups completely. Standard advice says two-thirds full. Ignore it here. Fill jumbo cups right to the rim, slightly mounded. You are making six muffins from this batter, not twelve.
Sour cream, not just milk. The fat and acidity give you a tender crumb that survives being this big without drying at the edges.

How To Make Perkins Mammoth Muffins

Step One: Heat the oven to 425°F and line a 6-cup jumbo muffin tin with jumbo papers, or grease it well. Do not use a standard 12-cup tin.
Step Two: Make the streusel. Combine the flour, brown sugar, and cinnamon, then cut in the cold butter with your fingers or a fork until the mixture looks like coarse crumbs. Refrigerate it while you mix the batter.

Step Three: Whisk the flour, sugar, baking powder, baking soda, and salt together in a large bowl. Remove a tablespoon of this mixture and toss it with the blueberries in a separate bowl.
Step Four: In another bowl, whisk the eggs, sour cream, milk, melted butter, and vanilla until smooth.

Step Five: Pour the wet into the dry and fold with a spatula just until no dry flour remains. The batter will be very thick and lumpy. That is correct. Stop mixing. Fold in the floured blueberries with two or three strokes.
Step Six: Divide the batter among the six cups, filling each to the rim and mounding slightly. Top each generously with the chilled streusel and press it down lightly so it adheres.

Step Seven: Bake at 425°F for 8 minutes, then reduce the oven to 350°F without opening the door and bake another 18 to 22 minutes, until a toothpick in the center comes out with a few moist crumbs.
Step Eight: Cool in the tin for 10 minutes, then move to a rack. They finish setting as they cool, so resist cutting into one immediately.

Mammoth Muffin Flavors
The batter above is the base. Each variation swaps one or two things and keeps everything else the same.
Pumpkin cream cheese. Replace the sour cream with pumpkin puree and add 2 teaspoons pumpkin pie spice. Spoon a tablespoon of sweetened cream cheese into the center of each cup before topping with streusel.
Banana nut. Replace the sour cream with 1 cup mashed ripe banana and fold in 3/4 cup chopped walnuts in place of the blueberries.
Cranberry orange. Swap the blueberries for fresh cranberries, chopped, and add the zest of one orange to the wet ingredients.
Apple cinnamon. Use 1 1/2 cups peeled, finely diced apple instead of blueberries and add 1 teaspoon cinnamon to the dry ingredients.
Chocolate chip. Swap in 1 1/2 cups semisweet chips. Skip the cinnamon in the streusel.
Raspberry cream. Use fresh raspberries and add a cream cheese center as in the pumpkin version. Fold gently; raspberries break down faster than blueberries.
Bran. Replace 1 cup of the flour with wheat bran and add 2 tablespoons molasses to the wet ingredients.
Recipe Tips
- Do not overmix. Lumps in muffin batter are fine. A smooth batter means developed gluten, which means tough, tunneled muffins.
- Use fresh berries if you can. Frozen work, but add them straight from the freezer without thawing or they’ll bleed through the batter.
- Chill the streusel. Warm streusel melts into the top instead of staying crumbly.
- Don’t open the oven during the temperature drop. Just turn the dial. Opening the door at minute 8 undoes the dome.
- Check at 26 minutes. Jumbo muffins vary by tin. Underbaked centers sink as they cool.

Storing Instructions
- Room temperature: Airtight container for 2 days. Put a paper towel underneath to absorb condensation, which is what makes streusel go soft.
- Refrigerator: Up to 5 days, though they dry faster. Bring to room temperature before eating.
