Ingredients You’ll Need

Ingredients needed for Cheesecake Factory Copycat Celebration Cheesecake on kitchen table.

For the Crust:

  • Graham crackers – Use plain graham cracker crumbs for the classic flavor and texture. For a twist, you can substitute with crushed digestive biscuits or Oreos.
  • Ground cinnamon – Optional, but it adds a warm, subtle spice to the crust. Skip if you prefer a plain crust.
  • Melted butter – Helps bind the crust and adds richness. You can use unsalted or salted butter, or substitute with melted coconut oil for a dairy-free option.

For the Cheesecake Filling:

  • Cream cheese – I recommend using full-fat cream cheese for the creamiest texture.
  • Vanilla – Pure vanilla bean paste is best, but vanilla extract also works to give it a lovely flavor!
  • Eggs – Needed for any baked cheesecake. I recommend using large free range eggs.
  • Sour cream – Provides tanginess and creaminess. You can substitute with plain Greek yogurt or extra heavy cream.
  • Heavy cream – You can use whipping cream or even coconut cream for a dairy-free variation.
  • All-purpose flour – Stabilizes the filling for a smooth consistency. Replace with cornstarch for a gluten-free option.

How to Make Air Fryer Cheesecake Factory Copycat Celebration Cheesecake

Combining graham crackers, sugar, cinnamon, and melted butter to form a crust in a round cake pan.

Step One: In a bowl, combine graham crackers, sugar, and cinnamon. Add melted butter and stir until evenly mixed. Press the mixture into the bottom of a 6 or 7-inch round cake pan to form a firm crust. Set aside.

Beating softened cream cheese with sugar, vanilla, eggs, sour cream, heavy cream, and sifted flour until smooth and well combined.

Step Two: Beat softened cream cheese with an electric mixer until smooth. Add sugar and vanilla extract, mixing until combined. Beat in the eggs one at a time, then stir in sour cream and heavy cream, and sift in flour. Combine until the mixture is fully blended.

Mixing softened cream cheese, sugar, vanilla, eggs, sour cream, heavy cream, and flour until smooth and fully blended with an electric mixer.

Step Three: Pour the filling over the crust and smooth the top with a spatula. Place the cheesecake pan into the air fryer basket. Set air fryer temperature, to 320 degrees F, and cook time for 20-25 minutes, or until the center is set but still a little bit jiggly.

Set unbaked cheesecake into the air fryer basket.

Step Four: Allow the cheesecake to cool completely before transferring it to the fridge. Chill for at least 4 hours or overnight for the best texture. If you cut it too soon, it will be too soft.

Step Five: Once chilled, remove the cheesecake from the pan and transfer it to a cake plate. Top with whipped cream, sprinkles or fresh fruit. Slice and enjoy!

Variations

  • Chocolate: Add 1/4 cup cocoa powder to the filling and top with chocolate shavings or ganache.
  • Fruit Swirl Cheesecake: Swirl in raspberry, strawberry or blueberry puree before baking for a fruity twist.
  • Oreos: Replace the graham cracker crumbs with crushed Oreo cookies for a chocolaty base.
  • Lemon: Add a teaspoon of lemon zest and a tablespoon of lemon juice to the filling for a citrussy flavor.
  • Gluten-Free Option: Use gluten-free graham cracker crumbs for the crust to make the cheesecake gluten-free.

Tips & Tricks

  • Room Temperature Ingredients: Ensure the cream cheese, eggs and sour cream are at room temperature for a smooth and lump-free texture.
  • Don’t Overmix: Beat the ingredients just until combined to avoid incorporating too much air, which can cause cracks.
  • Use Parchment Paper: Line the bottom of the pan with parchment paper to make removing the cheesecake easier.
  • Check for Doneness: The cheesecake is done when the edges are set, but the center still jiggles slightly. It should be a little jiggly and only in the middle. Don’t worry, it will firm up more as it cools.
  • Chill Well: Let the cheesecake chill for at least 4 hours to allow the texture to set. If you slice it too soon, it can be too soft and not hold shape.

Ingredients

Crust Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup butter, melted

Cheesecake Filling Ingredients:

  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/4 cup heavy cream

Topping Suggestions:

  • Whipped cream, optional
  • Sprinkles or fresh fruit, optional

Instructions

  • In a medium bowl, mix together the graham cracker crumbs, sugar, and cinnamon. Add the melted butter and stir until evenly combined. Press the mixture firmly into the bottom of a 7-inch round cake or cheesecake pan, creating an even crust. Set aside.
  • In a large bowl, beat the cream cheese with an electric mixer until smooth and creamy. Add the sugar and vanilla extract, and beat until combined. Add the eggs, one at a time, mixing well after each addition. Stir in the sour cream, flour, and heavy cream until fully combined.
  • Pour the cheesecake batter over the prepared graham cracker crust, smoothing the top with a spatula for even baking.
  • Preheat your air fryer to 320°F (160°C). Place the cheesecake pan in the air fryer basket or tray and cook for 20-25 minutes, or until the cheesecake is set in the center but still slightly jiggly. Check for doneness by inserting a toothpick—if it comes out clean, it’s done.
