If you’ve only used your air fryer for fries and chicken wings, you’re missing out on one of its best tricks: dessert. And when it comes to fruit, strawberries might be the single best thing you can put in the basket.

Here’s why. The air fryer’s fast, dry, circulating heat does two things strawberries love. It drives off moisture, which concentrates their sweetness into something closer to jam than fresh fruit. And it crisps pastry, biscuit dough, and crumble toppings in a fraction of the time an oven takes, with no preheating and no heating up the kitchen.

These 20 recipes range from a 10-minute topping to a full galette, and every one of them works with the strawberries you’ve already got in the fridge. I’ve tested each in a 5.8-quart basket-style air fryer; if yours runs hot, check a minute or two early.

Tips for Air Frying Strawberry Desserts

A few things I’ve learned after a lot of strawberry-stained baskets:

  • Line the basket. Strawberry juice caramelizes fast and welds itself to the basket. Perforated parchment liners or a small oven-safe dish save you a scrubbing session.
  • Don’t crowd. Air fryers cook by moving hot air around the food. Pastry that’s touching steams instead of crisps. Two smaller batches beat one packed one.
  • Pat berries dry for fillings. Wet strawberries make pastry soggy and fillings runny. A quick blot with a paper towel makes a visible difference in hand pies and egg rolls.
  • Cornstarch is your friend. A teaspoon or two in any filling thickens the juice so it stays inside the pastry instead of leaking out.
  • Check early. Air fryers vary more than ovens. Start checking 2 minutes before the low end of the time range, especially the first time you make a recipe.
  • Chill pastry before cooking. Ten minutes in the freezer helps hand pies and crescent dough keep their shape and bake up flakier.
  • Frozen strawberries work for roasting and crumble. Thaw, drain well, and add an extra teaspoon of cornstarch. Skip them for anything where the berry needs to hold its shape, like the chocolate bites.

Frequently Asked Questions

Do I need to preheat the air fryer? For these recipes, no. Pastry and fruit do fine starting from cold. If your model insists on a preheat cycle, subtract 1 to 2 minutes from the cook time.

Can I use an oven-style air fryer instead of a basket? Yes. Use the middle rack and add 1 to 2 minutes, since oven-style models tend to run slightly cooler at the center.

My pastry browned on top but the bottom is pale. What happened? The heating element is above the food, so tops brown first. Flip hand pies and egg rolls halfway through, and for crumbles, give the ramekin a minute or two more with foil loosely over the top.

Can I make these ahead for a party? Roasted strawberries and the crumble reheat well. Hand pies can be assembled and frozen unbaked, then air fried from frozen with 3 extra minutes. Make the egg rolls and chocolate bites just before serving.

What if I don’t have parchment liners? A light coat of cooking spray on the basket works for pastry. For roasted strawberries, use any small oven-safe dish or a sheet of foil folded up at the edges.

If you make any of these, leave a comment and let me know which one won the night. And if you’re still working through a flat of strawberries, roasting a batch (recipe 1) is the easiest way to use them up before they turn.
