- It’s thick, not icy. The combination of ultra-filtered milk and a tablespoon of instant pudding mix gives the base enough body to spin creamy instead of shattering into powder.
- It fits the pint. I’ve measured this against the Creami max fill line. It sits comfortably under it, so nothing overflows during processing — a real problem with recipes calling for two full cups of liquid.
- Four ingredients. No blender required. A milk frother or a whisk does it.
- It’s a base, not a dead end. Vanilla is the platform. Once you’ve got it down, mix-ins take about thirty extra seconds.

- 1½ cups Fairlife fat-free ultra-filtered milk — This is the single most important swap you can make. Fairlife has roughly 13g of protein per cup versus 8g in regular milk, and it’s filtered to reduce sugar. It’s why this recipe hits 45g per pint without tasting like a shake.
- 1 scoop (about 31g) vanilla protein powder — Use a whey-casein blend if you can. More on this below, because it genuinely matters.
- 1 tablespoon sugar-free instant vanilla pudding mix — Not optional. The modified starch in instant pudding is what keeps the base from freezing into a solid brick and gives you that soft-serve pull.
- 1 teaspoon pure vanilla extract — Rounds out the artificial edge that protein powders sometimes carry.

The Best Protein Powder for the Ninja Creami
This is the part most recipes skip, and it’s the difference between ice cream and disappointment.
- Whey isolate alone is the worst choice. Isolate is stripped of fat and lactose, which is great for a shake and terrible for frozen dessert. It doesn’t hold water, so it freezes into ice crystals and spins up chalky. If isolate is all you have, it will still work — but you must re-spin with added liquid.
- Casein is the best choice. Casein absorbs water and thickens as it hydrates, which is exactly what you want in a frozen base. It gives you that dense, slow-melting texture. The tradeoff is that it can taste slightly thicker or pastier if you overdo it.
- A whey-casein blend is the sweet spot. You get the clean flavor of whey with the body of casein. - Plant-based works with adjustments. Pea and rice protein blends are grittier by nature. Use oat milk instead of almond, add the full tablespoon of pudding mix, and plan on re-spinning every time.
How to Make Ninja Creami Vanilla Protein Ice Cream

Step 1 — Combine. Add the Fairlife milk, protein powder, pudding mix, and vanilla extract directly to an empty Ninja Creami pint container. Using a milk frother, blend for about 20 seconds until completely smooth. No clumps of powder — clumps become gritty pockets in the finished ice cream.

Step 2 — Check the fill line. The mixture should sit at or just below the max fill line on the pint. If you’re over it, pour a little off. Overfilling causes the base to push up past the paddle and jam the machine.

Step 3 — Freeze flat for 24 hours. Seal with the pint lid and place it on a level surface in the freezer. This part is not negotiable. A base that’s frozen for 12 hours will spin into slush, and a base frozen on a tilted surface freezes unevenly and processes badly. Twenty-four hours, flat, lid on.
Step 4 — Spin. Remove the lid, seat the pint in the outer bowl, lock it into the machine, and press LITE ICE CREAM if your model has it, or ICE CREAM if it doesn’t. Let the cycle run all the way through before removing the pint.
Step 5 — Assess and re-spin. Pull the pint and look at the surface. If it’s smooth and glossy, you’re done. If it looks crumbly or powdery — which is normal and expected for high-protein bases — go to the next step.
Step 6 — Re-spin (the step that makes or breaks this recipe). Add 1 to 2 tablespoons of milk directly on top, then run the RE-SPIN cycle. The second pass is what transforms a dry, sandy pint into actual ice cream. Most people who say protein ice cream “doesn’t work” in the Creami simply stopped after the first spin.
Step 7 — Serve. Scoop immediately for soft-serve texture, or return the pint to the freezer for 15–20 minutes if you want it firmer.

Why Is My Protein Ice Cream Crumbly or Powdery?
If you take one thing from this post, take this section.
It’s supposed to look like that after the first spin. Protein powder binds water differently than cream and sugar do. The first pass through the Creami breaks the frozen block into fine particles, and with a high-protein base those particles look dry. That’s not failure. That’s the halfway point.
The fix is always the same: add 1–2 tablespoons of liquid and run RE-SPIN. If it’s still not smooth, add another tablespoon and re-spin a second time. You cannot really over-re-spin — worst case you end up with soft-serve, which is delicious.
Preventing it next time:
- Switch from whey isolate to a blend or casein
- Make sure you’re using the full tablespoon of pudding mix
- Freeze flat, not on top of a bag of peas

Recipe Tips
- Two pints, one session. Make a second base while the first is freezing so you always have one ready.
- Cold ingredients blend better. Straight from the fridge, the powder disperses more evenly.
- Taste before freezing. Freezing dulls sweetness noticeably. If it tastes perfectly sweet at room temperature, it will taste flat frozen. Go slightly sweeter than feels right.
- Sugar-free pudding mix, specifically vanilla. Cheesecake flavor also works beautifully here and adds a subtle tang.
- Label your pints. Once you start making several bases at a time, they all look identical frozen.
Mix-In Ideas
Add mix-ins after the final spin, never before freezing. Use the handle of a wooden spoon to press a well into the center, add your mix-in, and run the MIX-IN cycle.
