How To Make Instant Pot Madeleine Tomato Basil Soup

Onions, garlic, carrots, and celery sautéing in an Instant Pot with olive oil until tender and fragrant.

Step One: Set your Instant Pot to the Sauté function. Add olive oil, then sauté onion, garlic, carrots, and celery until softened and fragrant, about 5 minutes.

Step Two: Stir in canned tomatoes, tomato paste, vegetable broth, salt, pepper, and half of the fresh basil leaves. Mix well to combine all flavors.

Instant Pot sealed and set to High Pressure, cooking tomato basil soup ingredients together.

Step Three: Lock the Instant Pot lid in place, set the valve to Sealing, and cook on High Pressure for 15 minutes. Once done, allow a natural release for 10 minutes, then quick release any remaining pressure.

Step Four: Carefully use an immersion blender (or transfer in batches to a blender) and blend the soup until smooth and creamy. Switch back to Sauté mode, stir in heavy cream, and adjust seasoning with more salt and pepper if needed. Add remaining fresh basil for brightness.

Step Five: Ladle into bowls and serve hot with crusty bread, grilled cheese, or croutons for a cozy, comforting meal.

Madeleine Tomato Basil Soup Recipe Tips

  • Use quality tomatoes – Canned San Marzano or fire-roasted tomatoes add a deeper, sweeter flavor.
  • Sauté for flavor – Don’t rush the onion, garlic, carrot, and celery step—this builds the soup’s rich base.
  • Adjust thickness – For a thicker soup, reduce the broth slightly; for a lighter version, add extra broth or cream.
  • Blend carefully – An immersion blender gives a rustic texture, while a countertop blender makes it silky smooth.
  • Add cream last – Stir in the heavy cream after blending to keep it rich and velvety without curdling.
  • Garnish smartly – Fresh basil, a swirl of cream, or crunchy croutons make it look and taste restaurant-worthy.

Storing, Freezing & Reheating Instructions

  • Storing: Store leftover soup in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave until warmed through.
  • Freezing: Allow the soup to cool completely before transferring it to a freezer-safe container. Freeze for up to 3 months and thaw overnight in the refrigerator before reheating.
  • Reheating: Reheat on the stovetop over medium heat, stirring occasionally to prevent sticking. For a creamier texture, add a splash of milk or cream while warming.
