  • 4 medium green onions, sliced
  • 2 medium green bell pepper, red, or yellow bell pepper, chopped
  • 6 large eggs
  • 2 tablespoon milk
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon black pepper, to taste
  • 4 flour tortillas, 7 to 8 inches in diameter, heated
  • 1/2 cup shredded Cheddar , or Monterey Jack cheese
  • 1/2 cup tater tots, cooked, optional
  • 1/2 cup bacon, cooked, optional

Instructions

  • Warm the olive oil in a 10-inch nonstick skillet over medium-high heat. Add the onions and bell peppers, cooking for 2–3 minutes while stirring occasionally until they become crisp-tender.
  • In a medium bowl, whisk together the eggs, milk, salt, and pepper until fully combined. Pour the egg mixture over the vegetables in the skillet and reduce the heat to medium.
  • Cook for 4–6 minutes, stirring frequently, until the eggs are set but still moist. Spoon the mixture onto warm tortillas, sprinkle with cheese, and roll them up to serve.
