Make a copycat Sonic SuperSonic Breakfast Burrito at home with eggs, sausage, cheese, and crispy tater tots. Quick, easy, and perfect for a hearty breakfast or brunch.
Ingredients
1tablespoonolive oil
4mediumgreen onions, sliced
2mediumgreen bell pepper, red, or yellow bell pepper, chopped
6largeeggs
2tablespoonmilk
1teaspoonsalt, to taste
1/2teaspoonblack pepper, to taste
4flour tortillas, 7 to 8 inches in diameter, heated
1/2cupshredded Cheddar , or Monterey Jack cheese
1/2cuptater tots, cooked, optional
1/2cupbacon, cooked, optional
Instructions
Warm the olive oil in a 10-inch nonstick skillet over medium-high heat. Add the onions and bell peppers, cooking for 2–3 minutes while stirring occasionally until they become crisp-tender.
In a medium bowl, whisk together the eggs, milk, salt, and pepper until fully combined. Pour the egg mixture over the vegetables in the skillet and reduce the heat to medium.
Cook for 4–6 minutes, stirring frequently, until the eggs are set but still moist. Spoon the mixture onto warm tortillas, sprinkle with cheese, and roll them up to serve.
If you want to add cooked bacon, cooked sausage or cooked tater tots, add them when you spoon the mixture into the tortillas. For a crispy finish, place them into the air fryer for 2-3 minutes at 350 degrees F.
