To make French Toast Casserole in the air fryer, follow these simple steps:

Cut bread into ½” squares.  Lightly spray an 8×8 square baking dish with non-stick spray. Arrange a single layer of the bread cubes over the bottom of the pan.

*We use an instant pot vortex air fryer, and the 8×8 fits perfectly. The baking dish size may need to be adjusted depending on the model. Adjust ingredients accordingly, or make two batches*

Combine ricotta, sour cream, cream cheese, powdered sugar, vanilla, and ½ tbsp brown sugar in a medium mixing bowl. Whisk until smooth. Pour half of the mixture over the bread.

Sprinkle ½ of the blueberries and peaches over the bread. Top with half the remaining bread cubes and pour the cream cheese mixture over the top. Then, sprinkle the remaining fruit and bread cubes into the dish.

Whisk to combine eggs, milk, heavy cream, brown sugar, and maple syrup in a small mixing bowl. Pour over the bread.

Cover the baking dish with aluminum foil and place it in the fridge until ready to cook. (We will sometimes make this the night before, but this can be made right away as well)

Preheat the air fryer to 350* for 5 minutes. Place the baking dish covered with foil into the air fryer basket. Cook for 20 minutes.  Remove the foil and cook for 3 more minutes.

Prepare as directed and then cover tightly with saran wrap. Placed into the refrigerator, it will last for up to 24 hours. There are only a few ingredients, but it has a fresh and delicious filling made with fruit! Everyone, young and old, will love this!

How To Store Leftovers

If you have any leftovers, cover them tightly and refrigerate for about 4 to 5 days. To reheat, place them in the air fryer or microwave and heat until warmed through.

The French Toast Casserole is one of my favorite things to make in the Air Fryer! I love the taste and texture of the this dish. It is also very easy to make. In just a few minutes, you can have a delicious breakfast or brunch dish that will impress your guests!

Ingredients 

  • 1/2 loaf honey wheat bread
  • 1/4 cup ricotta cheese
  • 1/4 cup sour cream
  • 5 ounces cream cheese, softened 
  • 1/4 cup powdered sugar
  • 1/2 tablespoon vanilla extract 
  • 1 tablespoon brown sugar, divided
  • 2/3 cup  blueberries
  • 1 large peach, peeled and diced
  • 3 large eggs
  • 3/4 cup milk
  • 1/4 cup heavy whipping cream 
  • 1/4 cup maple syrup (plus more for serving)
