These homemade Air Fryer Cherry Chimichangas are a fantastic dessert. They are so easy to make and one of the best and easiest air fryer treats you can make yourself or your family.
If you are new to air frying, let me tell you there is nothing like an air fryer dessert at the end of a long day. (or even a mid-day snack, if it has been one of those days)
This is very similar to cherry flauta, cherry enchiladas, or even an air fryer cherry cheesecake taco (oh yeah, I went there), and they are simple to make. Within a few minutes, you will have the perfect air fryer dessert.

Air Fryer Cherry Chimichangas
The ingredients for these are straightforward, you only need a few pantry items and your trusty air fryer, and you are good to go.
Ingredients Needed For Air Fryer Cherry Chimichangas
- Cherry Pie Filling
- Granulated Sugar
- Ground Cinnamon
- Flour Tortillas (Medium or Large)
- Melted Unsalted Butter
- Vanilla Ice Cream or Whipped Cream For Serving
How To Make Air Fryer Cherry Chimichangas
Start by preheating the air fryer to 400 degrees F, air fryer setting. Then lay down your tortilla and scoop about 2-3 tablespoons of pie filling on top.
The amount of filling is going to be determined by how large your tortillas are. Roll them up, tuck the sides and place them seam down into the air fryer basket. To make them really crisp up, spray with some cooking spray. Air Fry for about 3-4 minutes.
Meanwhile, melt the butter, and make the topping. In a small bowl, mix the ground cinnamon and sugar. When done cooking, brush on the melted butter with a pastry brush and sprinkle the cinnamon/sugar mixture over the tops. Serve with a scoop of vanilla ice cream or whipped cream.
WHAT KIND OF PIE FILLING SHOULD I USE?
You can use whatever is your favorite. Today, I used cherry, but this recipe would work perfectly with apple, peach, blueberry, or blackberry pie filling.
WHAT SIZE TORTILLA SHOULD I USE?
I would opt for a 10-inch flour tortilla. Otherwise, it will be too small to roll and tuck under while still getting a lot of pie filling.
This recipe will work for Gluten-Free Tortillas as well.
HOW SHOULD I STORE THESE?
These are really meant to be eaten fresh.
I usually make them as my kids wait for them, a great family activity. Since you want them to be fresh, make as much or as little as you want. The cherry (or another pie filling) will store well in the refrigerator, as will the tortillas.
RECIPE TIPS
- Do not crowd the basket, otherwise the tortilla will not crisp up, you really need the hot air to circulate around the basket, to get the best results.
- If you want really crispy tortillas, spray them generously with cooking spray.
- Serve them warm, and use a pastry brush to brush the melted butter on them.
- Make sure that your basket is sprayed with cooking spray.
- Make sure that the chimichangas are seamed side down, which will help them not explode in the air fryer.
