This is one of my favorite recipes, and with the holidays coming up, I really wanted to make another batch of Air Fryer Cherry Cheesecake Cupcakes.
This is truly just a fun baking project, and in the end, you get an amazing and delicious dessert. So, if you are like me, and love cheesecake this is a great recipe, and it’s so awesome to serve around the holidays. What is nice, if that you do not even need to serve them, everyone just grabs one, which makes clean-up a breeze.
While this might look super complicated it’s actually really easy to make, and you only need a few ingredients.

- Graham Cracker Crumbs: You can also use crushed Oreos for the base of the cheesecake.
- Butter: Use unsalted butter.

How To Make Mini Cheesecakes In Air Fryer
Cheesecake lovers, rejoice! Who said you need an oven to enjoy a delicious and creamy slice of cheesecake? With the help of your air fryer, you can now make mini cheesecakes in no time. Not only do these turn out as delicious as their oven-baked counterparts but they’re also faster to make and virtually mess-free. So don’t wait any longer – let’s dive into this blog post and learn how to craft beautiful and yummy little cheesecakes in just about 20 minutes!
Step One: Prepare The Graham Cracker Crust
Start by placing your graham crackers in a ziplock bag, and then use a rolling pin to crush them. Then in a medium-sized bowl, add 1 cup of crushed graham crackers, the melted butter, and sugar. Mix well. This will become your bottom crust.
Step Two: Air Fry The Mini Cheesecake Crust
Press the mixture in either a cupcake tin or you can use muffin liners, I did both.
Step Three: Prepare The Cheesecake Filling
Then in a mixing bowl mix together the cream cheese, sugar, eggs, and vanilla extract. Mix until smooth. Then fill the muffin tin cup, to almost the top with the filling.
Step Four: Air Fry Mini Cheesecakes
Place in the air fryer basket or tray, and set the temperature to 330 F for 10 minutes, after 10 minutes check and see if the crust is firm, if not add another 5 minutes
Step Five: Serving
Let cool slightly and then scoop the cherry pie filling on top.
Pro Tips For Making the Best Air Fryer Mini Cheesecake
- Make sure you start with room-temperature cream cheese, otherwise, you will have lumps in your cheesecake.
- Try not to over-mix the filling; once the filling is smooth, stop mixing.
- Always let the cheesecake cool to room temperature before chilling. If you do not chill, it will be soup. The cream cheese filling needs the cold to firm up.
Storing
I highly recommend that you keep these in the refrigerator. The greatest thing is since they are cupcakes, just line them on a plate, and place the plate of uneaten ones back in the refrigerator.
Freezing Cheesecake
Unfortunately, this recipe does not freeze well.
