Recipe Variations

I love the traditional flavors the corn tortillas lend to this dish. However,  Instead of the corn tortillas you could also use flour tortillas, whole wheat tortillas, or low carb tortillas!

Want to spice it up a little? Add jalapeños into the ground beef mixture and a little hot sauce into the enchilada sauce!

How To Make Air Fryer Ground Beef Enchiladas

Step One: Heat a pan on the stove to medium. Add the ground beef. Season with your favorite seasonings, I used a ½ Tsp of black pepper, a ½ Tsp of salt, and 1 Tsp garlic powder. Cook until browned, then drain the grease from the pan.

Step Two: In a large bowl add the Rotel, black beans, ground beef, chopped onions, and half of the shredded cheese.   Before adding everything to the bowl, you can set aside a few Tbsp of the onions and Rotel, if you wish to top the enchiladas with after they finish cooking!

Step Three: Mix everything well with a spatula or spoon. Set aside. Preheat the air fryer to 400 degrees F, for 3-5 minutes.

Step Four: One by one, fill each corn tortilla with your ground beef mixture. Rolling each up and placing them side by side in the foil lined basket.

Step Five: Fit as many as you can in a single layer, you want them to touch but not to be stacked. Top with the rest of the shredded cheese & drizzle with the enchilada sauce. Set cook time for 8-10 minutes. The tortillas should be a golden brown on the edges and the cheese should be melted.

Step Six: Remove from the air fryer basket and transfer to a serving dish and top with the rest of the Rotel and raw onion. Add the sliced jalapeño, and serve with sour cream, cilantro, guacamole, salsa, or your own favorite toppings.

Description

Ingredients 

  • 1 pound ground beef, lean
  • 1/2 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper, adjust to taste
  • 1 teaspoon garlic powder, adjust to taste
  • ¾ cup Rotel, Diced Tomatoes/Green Chiles
  • 1 cup Black Beans, Drained
  • ¼ cup White Onion, Chopped
  • ½ cup Shredded Cheddar Cheese
  • 10 Corn Tortillas
  • ¼ cup Enchilada Sauce
  • 1 Jalapeño, Sliced

Instructions

  • Heat a skillet over medium heat and add the 1 pound ground beef. Season with 1/2 teaspoon black pepper, 1/2 teaspoon salt, and 1 teaspoon garlic powder, then cook until browned. Drain off any excess grease and set aside.
  • In a large bowl, combine the ¾ cup Rotel, 1 cup Black Beans, cooked ground beef, chopped ¼ cup White Onion, and half of the shredded cheese. If you want toppings later, save a few spoonfuls of the onions and Rotel before mixing.
  • Stir everything together until well combined. Set the mixture aside. Preheat your air fryer to 400°F for 3-5 minutes.
  • Fill each 10 Corn Tortillas with the beef mixture, roll them up, and place them side by side in a foil-lined air fryer basket.
  • Arrange the enchiladas in a single layer so they touch but don’t stack. Sprinkle with the remaining cheese and drizzle with ¼ cup Enchilada Sauce. Set cook time for 8-10 minutes, until the edges turn golden and the cheese is melted.
  • Transfer the enchiladas to a serving dish and top with the reserved Rotel and onions. Add sliced 1 Jalapeño and serve with sour cream, cilantro, guacamole, salsa, or whatever toppings you love most.
