Heat a skillet over medium heat and add the 1 pound ground beef. Season with 1/2 teaspoon black pepper, 1/2 teaspoon salt, and 1 teaspoon garlic powder, then cook until browned. Drain off any excess grease and set aside.
In a large bowl, combine the ¾ cup Rotel, 1 cup Black Beans, cooked ground beef, chopped ¼ cup White Onion, and half of the shredded cheese. If you want toppings later, save a few spoonfuls of the onions and Rotel before mixing.
Stir everything together until well combined. Set the mixture aside. Preheat your air fryer to 400°F for 3-5 minutes.
Fill each 10 Corn Tortillas with the beef mixture, roll them up, and place them side by side in a foil-lined air fryer basket.
Arrange the enchiladas in a single layer so they touch but don’t stack. Sprinkle with the remaining cheese and drizzle with ¼ cup Enchilada Sauce. Set cook time for 8-10 minutes, until the edges turn golden and the cheese is melted.
Transfer the enchiladas to a serving dish and top with the reserved Rotel and onions. Add sliced 1 Jalapeño and serve with sour cream, cilantro, guacamole, salsa, or whatever toppings you love most.
