If you’ve never had chicken salad served hot, this is the recipe that will convert you. It tastes like the best parts of a chicken casserole and a deli chicken salad in one dish: creamy and tangy from the dressing, savory from sharp cheddar, and crunchy in every bite thanks to the celery, almonds, and chips. It’s the kind of dish that shows up at Amish church suppers, bridal showers, and funeral lunches — and disappears first.

What Is Amish Hot Chicken Salad?

Hot chicken salad is a mid-century American casserole that became a staple in Amish and Mennonite communities across Pennsylvania, Ohio, and Indiana. Unlike cold deli chicken salad, it’s mixed with cheese and a creamy dressing, topped with crushed potato chips or buttered crackers, and baked until bubbly. It’s often called a “sandwich salad” because it’s traditionally spooned onto bread, but it’s hearty enough to be a main dish with a vegetable on the side.

Amish Hot Chicken Salad Ingredients

Full measurements are in the printable recipe card below.

Ingredients for Amish hot chicken salad on a counter: cooked chicken, celery, onion, cheddar cheese, slivered almonds, Miracle Whip, lemon juice, and potato chips
  • Cooked chicken — 3 cups diced or shredded. Rotisserie chicken is easiest; leftover baked or poached chicken breast works too.
  • Celery — 1 cup finely chopped. This is the main crunch and a must in any Amish salad.
  • Onion — ½ cup finely diced sweet or red onion. Traditional recipes use very little; add more if you like it.
  • Sharp cheddar cheese — 1½ cups shredded, plus a little for the top. Sharp cheddar stands up to the creamy dressing.
  • Slivered almonds — ½ cup for toasty crunch. Chopped pecans or water chestnuts are good swaps.
  • Salad dressing or mayonnaise — 1 cup. Miracle Whip is the traditional Amish choice and gives the salad its signature sweet tang. Mayo makes it richer and less sweet.
  • Lemon juice — 2 tablespoons to brighten the dressing.
  • Salt and black pepper — to taste.
  • Potato chips — 1½ cups crushed, for the topping. Plain, ridged chips hold up best.

Optional add-ins: ½ cup cooked rice for a heartier casserole, ½ cup sliced water chestnuts, 1 cup frozen peas, a pinch of celery salt or garlic salt (the seasonings most often found in Amish kitchens).

How to Make Amish Hot Chicken Salad

Mixing diced chicken, celery, onion, cheddar, almonds, and creamy dressing in a large bowl

Step One: Preheat and prep. Preheat the oven to 400°F and lightly grease a 2-quart baking dish.

Step Two: Mix the salad. In a large bowl, combine the chicken, celery, onion, 1½ cups cheddar, almonds, salad dressing, lemon juice, salt, and pepper. Stir until everything is evenly coated. The mixture should be creamy but not soupy.

Step Three: Fill the dish. Spread the chicken mixture evenly into the baking dish and sprinkle with a little extra cheddar.

Step Four: Add the topping. Scatter the crushed potato chips over the top in an even layer, pressing lightly so they stick.

Step Five: Bake. Bake uncovered for 20 to 25 minutes, until the edges are bubbling and the chips are golden. Let rest 5 minutes before serving.

Air Fryer Method

Mix the salad as directed and spoon it into a 7-inch cake pan or two oven-safe ramekins that fit your basket. Top with chips. Air fry at 350°F for 10 to 12 minutes, until heated through and the chips are crisp and golden. Check at 8 minutes and tent with foil if the chips brown too fast.

Recipe Tips

  • Chop everything small and even. Amish hot chicken salad is meant to be spooned onto bread, so ½-inch pieces make it easy to scoop and eat.
  • Miracle Whip vs. mayo. Most Amish recipe cards just say “salad dressing,” which means Miracle Whip. If you’re a mayo person, use it — or do half and half for balance.
  • Add the chips right before baking. If they sit on the wet salad too long, they soften. For extra insurance, toss the crushed chips with 1 tablespoon melted butter before topping.
  • Don’t overbake. You’re just heating through and crisping the top. Overbaking breaks the dressing and makes it greasy.
  • Toast the almonds. Two minutes in a dry skillet deepens the flavor and keeps them crunchy in the casserole.
  • Double it for a crowd. This scales easily into a 9×13 dish; add 5 to 10 minutes to the bake time.

Ways to Serve Amish Hot Chicken Salad

  • On sandwich bread or toast — the traditional Amish way.
  • In croissants or brioche buns — for showers and luncheons.
  • On Ritz or butter crackers — as an appetizer.
  • Over a bed of lettuce — for a lighter plate.
  • As a main dish — with green beans, corn on the cob, or a simple cucumber salad.

Storing

  • Storing: Cover and refrigerate leftovers for up to 3 days. The chips will soften, so add a fresh handful when reheating.
  • Make ahead: Mix the salad (without the chips) up to a day ahead and refrigerate. Top with chips and bake when ready.
  • Reheating: Warm in a 350°F oven for 10 to 15 minutes, or in the air fryer at 325°F for 5 to 6 minutes to re-crisp the top. The microwave works but the topping stays soft.
  • Freezing: Not recommended — the dressing separates and the celery goes limp when thawed.

Amish Hot Chicken Salad FAQs

What’s the difference between hot chicken salad and chicken casserole? Hot chicken salad is built on a mayonnaise or salad dressing base with raw celery and onion for crunch, so it keeps a fresh, tangy salad character even when baked. A chicken casserole usually uses a cream soup or sauce base and cooked vegetables.

Can I use canned chicken? Yes. Two 12.5-ounce cans, drained well, replace the 3 cups of cooked chicken. Rotisserie or fresh-cooked chicken gives better texture.

Can I use crushed crackers instead of potato chips? Absolutely. Crushed Ritz crackers tossed with 2 tablespoons melted butter are the second most common Amish topping. French fried onions are another great option.

Can I make it without nuts? Yes. Swap the almonds for sliced water chestnuts or extra celery to keep the crunch.

Can I use Greek yogurt instead of mayo? You can replace up to half the dressing with plain Greek yogurt. It will be tangier and a little less rich.

Why is my hot chicken salad watery? Usually the chicken or celery released moisture, or the dish was overbaked. Pat the chicken dry before mixing and pull it from the oven as soon as the edges bubble.
