Description

A creamy, cheesy baked Amish chicken salad with crunchy celery, almonds, and a golden potato chip topping. A 30-minute potluck classic — oven or air fryer.

Ingredients 

  • 3 cups cooked chicken, diced or shredded
  • 1 cup celery, finely chopped
  • ½ cup sweet or red onion, finely diced
  • cups sharp cheddar cheese, shredded, plus ¼ cup for topping
  • ½ cup slivered almonds
  • 1 cup Miracle Whip or mayonnaise
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • cups crushed potato chips

Instructions

  • Preheat the oven to 400°F. Lightly grease a 2-quart baking dish.
  • In a large bowl, stir together the chicken, celery, onion, 1½ cups cheddar, almonds, Miracle Whip, lemon juice, salt, and pepper until evenly coated.
  • Spread into the baking dish and sprinkle with the remaining ¼ cup cheddar.
  • Top evenly with the crushed potato chips.
  • Bake uncovered 20 to 25 minutes, until bubbling at the edges and golden on top. Rest 5 minutes and serve warm.

  • 2-quart baking dish (or 7-inch pan for air fryer)

Notes

  • Miracle Whip gives the traditional sweet-tangy Amish flavor; mayo is richer.
  • Add the chips just before baking so they stay crisp.
  • Serve on bread, crackers, or lettuce, or as a main with vegetables.
