- 2 tablespoons Fresh Parsley, chopped
- 1 tablespoon Fresh Basil, chopped
- 1 tablespoon Fresh Chives, finely sliced
- 1 teaspoon Salt, To taste
- 1/2 teaspoon Black Pepper, To taste

- Rinse 2 pounds Fresh Mussels thoroughly under cold water. Scrub shells to remove any debris and pull off the beards. Discard any mussels that are cracked or remain open when tapped.
- In a bowl, mix 4 tablespoons Unsalted Butter, 4 cloves Garlic, 2 small Shallots, 2 tablespoons Fresh Parsley, 1 tablespoon Fresh Basil and 1 tablespoon Fresh Chives until well combined.
- Gently coat the cleaned mussels with the garlic herb butter mixture, ensuring each mussel is lightly coated.
- Place mussels in a single layer in the air fryer basket, add the 1/2 cup White Wine, and 1 tablespoon Lemon Juice to the bottom of the air fryer basket, to allow even cooking.
- Cook at 400°F for 6–8 minutes, checking halfway through. Mussels are done when shells have opened and meat is tender.
- Drizzle a little fresh lemon juice over the mussels. Serve immediately with extra chopped parsley for garnish, 1 teaspoon Salt, and 1/2 teaspoon Black Pepper.
