All About Cajun Seasoning

The heart of these chicken drumsticks lies in the Cajun seasoning, which provides a smoky, zesty, and satisfying punch. While many fantastic store-bought blends are available, making your own homemade Cajun spice gives you total control over the flavor and heat. A classic blend combines paprika, garlic powder, onion powder, oregano, thyme, and the heat source: cayenne pepper. To adjust the spice level for your family, simply increase or decrease the amount of cayenne pepper; for a milder flavor, you can even substitute half of the cayenne with a little extra black pepper.

🌡️ Checking Internal Temperature

Ensuring safety and achieving maximum juiciness relies entirely on accurate temperature. You must use a reliable meat thermometer and check the temperature in the thickest part of the drumstick, avoiding the bone. The USDA states that poultry is safely cooked when it reaches an internal temperature of 165°F (74°C). However, many experienced cooks prefer to pull drumsticks out closer to 170°F to 175°F as the dark meat texture benefits from slightly higher heat, resulting in a fall-off-the-bone tenderness while still being completely safe.
