Air Fryer, Banana Nut Muffins

This is one of my favorite recipes. I really get to use the overripe bananas, and it makes for an excellent breakfast, with a hot coffee cup.


  • 3 ripe bananas
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups flour
  • 1 cup chopped walnuts


  1. Start by mixing the bananas, butter, sugar, egg, vanilla extract, baking soda, baking powder, ground cinnamon, flour together in a large mixing bowl.
  2. Mix until smooth.
  3. Fold in the walnuts
  4. Spray your muffin tin with non-stick cooking spray.
  5. Spread your batter into the prepared pan, and place the tin into your air fryer basket. Set the temperature to 320 degrees F for 12 minutes.
  6. After 12 minutes, my muffins were nice. If they are not, add 2 minutes. Check for doneness.
  7. Plate, serve, and enjoy!
