This crockpot jalapeño popper dip tastes like a tray of stuffed jalapeño poppers, minus the coring, stuffing and frying. Cream cheese, sour cream, sharp cheddar and Monterey Jack melt low and slow with pickled jalapeños, then crispy bacon goes on top.

The secret is a splash of jalapeño brine from the jar plus a spoonful of dry ranch seasoning. The brine adds tang and steady heat, and the ranch adds herby, savory flavor. A dusting of smoked paprika finishes it. Set it up in 10 minutes, let the slow cooker do the rest, and switch it to WARM for game day, potlucks or holiday parties.

Why You’ll Love This Crockpot Jalapeño Popper Dip

  • Dump and go. Everything goes into the crock pot at once. No stovetop, no oven.
  • Stays warm for hours. Once it’s melted, the WARM setting keeps it scoopable through the whole party.
  • Built-in flavor boost. Jalapeño juice and ranch seasoning give it a tangy, herby kick most popper dips are missing.
  • Easy to adjust. Make it mild for kids or turn up the heat with fresh jalapeños.
  • Make-ahead friendly. Mix it the night before, then cook it the next day.

Ingredients for Jalapeño Popper Dip

Ingredients for crockpot jalapeño popper dip: cream cheese, sour cream, cheddar, Monterey Jack and pickled jalapeños
  • Cream cheese: The creamy base. Use full-fat blocks and let them soften so the dip melts smooth.
  • Sour cream: Loosens the cream cheese and adds a little tang.
  • Sharp cheddar: Brings the bold, classic popper flavor. Shred it from the block for the smoothest melt.
  • Monterey Jack: Melts silky and keeps the dip stretchy.
  • Pickled jalapeños: Diced and well drained. They give the dip its popper flavor without any chopping.
  • Jalapeño juice: A splash of brine from the jar. This is what makes the dip taste bright, not heavy.
  • Garlic powder, ranch seasoning and smoked paprika: Garlic adds savory depth, and dry ranch mix brings herby flavor that suits jalapeños. Ranch is salty, so taste before salting. Smoked paprika goes on top for smoky flavor and color.
  • Bacon: Cooked crisp and crumbled for the topping. If you’d rather skip the skillet, cook it in the air fryer. The thickness chart in my air fryer twisted bacon post is a handy timing guide for flat strips too.

How to Make Jalapeño Popper Dip in a Crock Pot

Cream cheese, sour cream, shredded cheese and pickled jalapeños in a crock pot before cooking

Step 1: Cook the bacon. Cook it until crispy, crumble it, and set it aside for the topping.

Step 2: Load the slow cooker. Add the cubed cream cheese, sour cream, cheddar, Monterey Jack, pickled jalapeños, jalapeño juice, garlic powder and ranch seasoning. Give it a quick stir. It doesn’t need to be smooth yet.

Step 3: Cook low and slow. Cover and cook on LOW for 2 to 3 hours or HIGH for 1 to 1½ hours. Stir every 30 minutes and scrape the sides so the cheese doesn’t scorch.

Step 4: Top and serve. Once it’s smooth and hot, sprinkle the bacon on top, dust with smoked paprika, and switch the slow cooker to WARM.

Tips for the Creamiest Slow Cooker Jalapeño Popper Dip

  • Soften the cream cheese first. Cold blocks go in lumpy and stay that way. Cube it and leave it out for 30 minutes.
  • Drain the jalapeños well. Measure the juice separately so you control exactly how much liquid goes in.
  • Use a 3- to 4-quart crock pot. In a bigger one the dip spreads thin and scorches around the edges.
  • Go LOW if your slow cooker runs hot. HIGH is faster, but a hot-running cooker can burn the edges.
  • Switch to WARM, not LOW, once it’s done. LOW keeps cooking, and overheated cheese can separate and turn greasy.

Make It Milder or Hotter

  • Milder: Use ¼ cup jalapeños and skip the juice, or swap in a can of mild diced green chiles.
  • Hotter: Add a diced fresh jalapeño with the seeds, a pinch of cayenne, or use pepper jack in place of Monterey Jack.

Easy Variations

  • Chicken jalapeño popper dip: Stir in 2 cups of shredded cooked chicken to make it hearty enough for dinner.
  • Fresh jalapeño version: Use 3 or 4 seeded, diced fresh jalapeños in place of pickled. Add a splash of lime juice for tang.
  • Bite-size poppers: Want the same flavor in a handheld? Try my air fryer jalapeño popper bites or crispy jalapeño popper wonton cups.

What to Serve With Jalapeño Popper Dip

Tortilla chips, Ritz crackers, pretzels, sliced baguette, celery and mini bell peppers are all great dippers. For a fresher crunch, make a batch of air fryer tortilla chips with corn or flour tortillas. For a low-carb option, scoop it up with air fryer jalapeño popper crisps.

Hosting a crowd? Set out a second crock of slow cooker beer cheese dip next to this one. Both hold on WARM and cover a spicy and a mild option.

Can You Serve Jalapeño Popper Dip Cold?

Yes. To make a cold jalapeño popper dip, skip the slow cooker and beat the softened cream cheese and sour cream until smooth. Stir in finely shredded cheddar and Jack, the jalapeños, the juice, the spices and most of the bacon. Chill it for at least 30 minutes, then top with the rest of the bacon.

Pull it from the fridge about 15 minutes before serving so it’s soft enough to scoop. Cold leftovers of the hot version also make a great spread for wraps and sandwiches.

Make Ahead, Storage and Reheating

Reheat: Warm it in the microwave in 30-second bursts, or on LOW in the slow cooker, stirring until creamy again.

Make ahead: Mix everything except the bacon in the slow cooker insert, cover, and refrigerate overnight. Cook it the next day, adding 30 to 45 minutes since it starts cold.

Store: Keep leftovers in an airtight container in the fridge for up to 4 days.

Freeze: Freeze for up to 2 months. Thaw overnight in the fridge before reheating.

Crockpot Jalapeño Popper Dip FAQs

How long does jalapeño popper dip take in a crock pot? About 2 to 3 hours on LOW or 1 to 1½ hours on HIGH. It’s ready when the cheese is fully melted and the dip is smooth after stirring.

Can I make jalapeño popper dip on HIGH? Yes, but stir it every 20 to 30 minutes. If your slow cooker runs hot, stick with LOW so the edges don’t burn.

Should I put the bacon in the dip or on top? On top, added just before serving. Stirred in early, bacon softens and loses its crunch.

Can I use fresh jalapeños instead of pickled? Yes. Use 3 or 4 seeded and diced fresh jalapeños. You’ll lose the brine’s tang, so add a squeeze of lime juice.

How long can it stay on WARM? Up to about 2 hours on the WARM setting. Stir it now and then, and add a splash of milk if it starts to thicken.

Is jalapeño popper dip gluten-free? The dip ingredients usually are, but check the labels on your cheese and bacon. Serve it with corn tortilla chips or veggies.
