Recently, my son wanted a recipe for his favorite candy. So I came up with a delicious and easy recipe for Andes Crème De Menthe cupcakes. The recipe is really easy to follow and the results were delicious! If you are a fan of Andes mints, then you need to try these cupcakes!

Ingredients Needed For Air Fryer Andes Mint Cupcakes
- White Cake Mix: Use your favorite cake mix, I used Dunkin Hines White Cake mix, but any brand will work!
- Water, Egg White, and Vegetable Oil: These will create your cupcake batter.
- White Chocolate Pudding: This will really add a lot of flavor to your cupcakes.
- Andes Candy: Use regular or seasonal Andes Candy, the recipe will be the same!
- Butter: Use room temperature, and salted butter.
- Salt: Just for a touch of saltness.
- Pure Vanilla Extract: Adds lots of flavors.
- Cocoa Powder: Usually I used dutch process chocolate, which adds a lot of flavors.
- Chocolate Syrup: Adds even more chocolate flavor to the frosting!
- Powdered Sugar: Makes the frosting smooth.
- Cream: You can also milk or heavy whipping cream.
How To Cook Air Fryer Andes Mint Cupcakes
Directions for Cupcakes:
- Step 1: Spray or line a standard muffin tin. Add cake mix to a large mixing bowl. Using an electric hand or stand mixer, mix in your water, oil, and eggs on medium speed until well incorporated.
- Step 2: Fold in ½ cup of the chopped candies
- Step 3: Add batter into the muffin tin until each is about 2/3 full. Set the muffin tin into the air fryer, at 320 degrees F, using the air fryer setting, and bake for 10 to 12 minutes, or until a toothpick comes out clean. Allow cooling completely before frosting.
Directions for Frosting:
- Step 4: Using an electric hand or stand mixer, cream the butter, and beat until light and fluffy (about 2 minutes)
- Step 5: Mix in the salt, vanilla extract, cocoa powder, and chocolate syrup.
- Steps 6-7: Slowly mix in the powdered sugar, 1 cup at a time, while adding a bit of the flavored creamer in between each cup. Continue to mix for 1 minute or until creamy. Prepare a piping bag and fill the bag with frosting and frost your cupcakes.
- Step 8: Top each cupcake with one of the cut squares of candy.

- Flour: To ensure a consistent cupcake be sure to measure your flour properly. We recommend using weighted measurements for an accurate result!
- Room Temperature Ingredients: To get the best results when you make your cupcakes, set out all of their ingredients at room temperature for an hour before cooking. This will allow them to combine better with wet substances like cream and sugar!
- Filling The Muffin Tins: These cupcakes rise significantly. It’s important not to fill the muffin cups more than half full or they will spill over as it bakes and rises, so I recommend using at least 2 to 3 tablespoons of batter per each recipe’s instructions for best results!
- Timing: Since every air fryer is slightly different, the timing of these cupcakes will vary by a few minutes. Remember to watch the cupcakes as they rise, so you don’t end up with burnt cupcakes.

How To Store And Freeze
Store: Let your cupcakes store to room temperature, and then cover and place the frosted cupcakes into the refrigerator.
Freeze: If you want to make a double or even triple batch, you can always freeze a batch. But I would not recommend frosting, until right before serving.
To Freeze: Let your cupcakes cool to room temperature and then place them into a freezer bag or freeze-safe container. They will last for 2 to 3 months in the freezer. When you are ready to use them, place them into the refrigerator the night before serving. Then frost as directed.

- 1 cup water
- 1/3 cup vegetable oil
- 3.3 ounce white chocolate pudding
- 3 large egg whites
- 1/2 cup Andes Candy Peppermint Bark or Ghirardelli Peppermint Bark Chocolate Squares, crushed or chopped
Frosting Ingredients:
- 1 1/2 stick butter, salted, room temperature
- 1/2 teaspoon salt
- 1 teaspoon pure vanilla extract
- 1/3 cup cocoa powder
- 1/4 cup chocolate syrup
- 4 cups powdered sugar
- 3 tablespoons milk, cream, or half and half
- 12 large Andes Chocolate Peppermint Candy or Ghirardelli Peppermint Bark Chocolate Squares, cut in half
