Ingredients 

  • 1/2 small onion, thinly sliced
  • 1/2 small potato, thinly sliced
  • 1 tablespoon olive oil
  • 3 large eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon parsley, chopped

Instructions

  • Preheat the air fryer temperature to 400 degrees F (200˚C), for 3-5 minutes.
  • Spray 2 small non-stick round tins with cooking spray.
  • Divide the onion slices between tins, then place the potato slices on top, seasoning with a pinch of salt and drizzling with olive oil. Cook for 10 minutes.
  • Once cooked, divide the egg mixture between the two cups, seasoning with salt and pepper. Turn Airfryer down to 325°F (165˚C) and cook for another 13 minutes.
  • Remove tins from air fryer and tip out onto a plate. Top with chopped parsley and serve.
