Description

Make smoky, tender, and juicy Traeger lamb chops with this easy recipe! Perfectly seasoned, reverse-seared, and cooked on a Traeger grill for restaurant-quality flavor at home.

Ingredients 

  • 12 Lamb chops , Bone-in or boneless, about 1–1.5 inches thick
  • 3 tablespoons Olive oil
  • 6 cloves Garlic, minced
  • 2 tablespoons Rosemary
  • 2 tablespoons Thyme
  • 1 1/2 teaspoon Salt , to taste
  • 1 teaspoon Black Pepper, to taste
  • 2 teaspoons Lemon Zest

Optional: 1 teaspoon smoked paprika or 1 tablespoon Traeger Lamb Rub – For extra smoky depth

Instructions

  • Set your Traeger to 225°F and choose your favorite wood pellets (hickory, cherry, or oak work great).
  • Rub the 12 Lamb chops with 3 tablespoons Olive oil , 6 cloves Garlic, 2 tablespoons Rosemary, 2 tablespoons Thyme, 1 1/2 teaspoon Salt , 1 teaspoon Black Pepper, and 2 teaspoons Lemon Zest. Let them rest for 15 minutes.
  • Place chops directly on the grill grates and smoke for 30–40 minutes, or until internal temperature reaches 115°F for medium-rare.
  • Increase Traeger temperature to 450–500°F. Sear each side of the lamb chops for 2–3 minutes until golden brown.
  • Remove from the grill and let the lamb rest for 5 minutes before serving.
