Description

This copycat recipe for Trader Joe's Vanilla Almond Granola Clusters gives you big, crunchy, vanilla-scented clusters loaded with toasted almonds, just like the ones from the Just the Clusters box. Made in one bowl with rolled oats, honey, and pantry staples, it bakes on a single sheet pan and breaks into perfect chunks once cooled. Serve it with milk, layer it into yogurt parfaits, or snack on it straight from the jar.

Ingredients 

  • 3 cups old-fashioned rolled oats
  • 1 cup sliced almonds
  • 1/2 cup crisp rice cereal
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon fine sea salt
  • 1/2 cup honey
  • 1/3 cup melted coconut oil or canola oil
  • 1 tablespoon pure vanilla extract
  • 1 large egg white, lightly beaten

Instructions

  • Preheat oven to 300°F and line a rimmed sheet pan with parchment.
  • Stir together oats, almonds, crisp rice cereal, brown sugar, and salt in a large bowl.
  • Whisk honey, melted oil, vanilla extract, and egg white until smooth.
  • Pour wet over dry and stir until fully coated.
  • Spread on the pan and press firmly into an even 1/2-inch layer.
  • Bake 25 minutes, rotate the pan, and bake 15 to 20 minutes more until golden. Do not stir.
  • Cool completely on the pan, about 45 minutes.
  • Break into clusters and store in an airtight container.

Notes

Press firmly, never stir, and cool completely for the biggest clusters.
