Description

Juicy, tender Traeger smoked pork tenderloin with a simple rub and rich, smoky flavor. Perfect for backyard BBQs or an easy weeknight dinner.

Ingredients 

  • 1.5 lbs pork tenderloin, trimmed of fat and silver skin
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Fresh rosemary or thyme, optional, for garnish

Instructions

  • Trim excess fat and silver skin from the pork tenderloin and pat dry with paper towels.
  • Brush all over with olive oil, then season evenly with salt, pepper, garlic powder, and paprika.
  • Preheat the Traeger to 225°F with the lid closed, about 15 minutes. Use Super Smoke if available.
  • Place the tenderloin directly on the grates, insert a meat thermometer, and smoke until it reaches an internal temperature of 145°F, about 1.5 to 2 hours.
  • Remove, tent loosely with foil, and rest 10 minutes. Slice against the grain and serve.

Notes

  • Cook to temperature, not time — start checking early since tenderloin cooks fast.
  • Cherry or apple pellets give the best mild, sweet smoke.
