Ingredients
32ouncesfrozen hashbrowns, thawed
1stickunsalted butter
1teaspoonminced garlic
1/2cupdiced onions
1cupsour cream
1/4cupall-purpose flour
2cupsvegetable broth, or chicken broth
1cupmilk
8ouncesshredded cheddar cheese
Topping:
2cupcrushed plain potato chips
1tablespoonunsalted butter, melted
1/4cupgrated Parmesan cheese
Instructions
In a large skillet over medium-high heat, sauté the1 stick unsalted butter, 1/2 cup diced onions and 1 teaspoon minced garlic until soft and translucent, about 4–5 minutes. Stir in the 1/4 cup all-purpose flour, 1 cup milk and 2 cups vegetable broth, then simmer for 4–6 minutes until the sauce thickens into a creamy consistency.
Remove the skillet from heat, then stir in the 1 cup sour cream and 8 ounces shredded cheddar cheese until smooth. Gently fold in the thawed 32 ounces frozen hashbrowns, making sure they’re evenly coated with the creamy mixture.
Coat your baking pan with cooking spray, then transfer the hash brown mixture into it. Place the pan in the air fryer, set to air fryer temperature to 320 degrees F, and set cook time for 10-12 minutes until the top is golden brown and crispy.1 cup sour cream
While the potatoes are cooking, combine the 2 cup crushed plain potato chips, 1 tablespoon unsalted butter, melted, and 1/4 cup grated Parmesan cheese in a small bowl. Sprinkle the mixture evenly over the potatoes, then continue cooking until the topping is golden brown and crispy.
