Ingredients
1cuppeanut butter, creamy
1/4 cuphoney
1teaspoonpure vanilla extract
2mediumbananas, ripe
2 1/4cupsquick oats
1/4cupcranberries, dried
1/4cupraisins
1/2cupnuts, walnuts, pecans or other nuts
1teaspoonsalt
1teaspoonground cinnamon
1teaspoonground nutmeg
Instructions
In a large mixing bowl, combine the mashed 2 medium bananas, 2 1/4 cups quick oats, 1 cup peanut butter, 1/4 cup honey1 teaspoon pure vanilla extract1 teaspoon ground cinnamon, 1 teaspoon ground nutmeg and 1 teaspoon salt Stir until the batter is smooth and well blended.
Gently fold in the dried 1/4 cup cranberries, 1/4 cup raisins, and 1/2 cup nuts, making sure the add-ins are evenly distributed throughout the dough.
Using a spoon or ice cream scoop, portion the dough onto a parchment-lined air fryer basket or tray. Cook in the air fryer at 330°F for 4–6 minutes, or until the edges are lightly golden.
Allow the cookies to cool before removing them from the basket, as they will firm up as they cool. Serve on a plate and enjoy warm, chewy, and flavorful breakfast cookies!
