Description

The Best Air Fryer Breakfast Cookies are healthy, soft, and packed with oats, nuts, and dried fruit. Quick and easy to make, perfect for breakfast, snacks, or on-the-go mornings.

Ingredients 

  • 1 cup peanut butter, creamy
  • 1/4 cup honey
  • 1 teaspoon pure vanilla extract
  • 2 medium bananas, ripe
  • 2 1/4 cups quick oats
  • 1/4 cup cranberries, dried
  • 1/4 cup raisins
  • 1/2 cup nuts, walnuts, pecans or other nuts
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg

Instructions

  • In a large mixing bowl, combine the mashed 2 medium bananas, 2 1/4 cups quick oats, 1 cup peanut butter, 1/4 cup honey 1 teaspoon pure vanilla extract 1 teaspoon ground cinnamon, 1 teaspoon ground nutmeg and 1 teaspoon salt Stir until the batter is smooth and well blended.
  • Gently fold in the dried 1/4 cup cranberries, 1/4 cup raisins, and 1/2 cup nuts, making sure the add-ins are evenly distributed throughout the dough.
  • Using a spoon or ice cream scoop, portion the dough onto a parchment-lined air fryer basket or tray. Cook in the air fryer at 330°F for 4–6 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool before removing them from the basket, as they will firm up as they cool. Serve on a plate and enjoy warm, chewy, and flavorful breakfast cookies!
