Description

Ingredients 

  • 2 Boneless, skinless chicken breasts, (around 6-8 ounces each)
  • 1 cup Buttermilk
  • 1 cup Flour
  • 1/4 cup Cornstarch
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Salt, adjust to taste
  • 1/2 teaspoon Black Pepper, adjust to taste
  • 1/2 cup Gravy, optional for serving

Instructions

  • Start by patting the chicken breasts dry with a paper towel. Season them with salt, pepper, garlic powder, onion powder, and paprika for flavor.
  • Pour the buttermilk into a shallow dish. Submerge the chicken breasts in the buttermilk and let them marinate for at least 30 minutes to an hour. This helps tenderize the chicken and ensures a moist interior.
  • In another shallow dish, mix together flour, cornstarch, and baking powder. Add a pinch of salt, pepper, and more paprika for extra flavor. Stir to combine.
  • Take each piece of chicken out of the buttermilk, allowing the excess to drip off. Coat the chicken evenly in the flour mixture, pressing gently to ensure the coating sticks.
  • Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.
  • Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the coated chicken breasts in the air fryer basket, ensuring they aren’t overcrowded (you may need to cook in batches depending on the size of your air fryer).
  • Air fry the chicken at 375°F (190°C) for 10-12 minutes, flipping halfway through. The chicken should be golden brown and crispy on the outside, and the internal temperature should reach 165°F (74°C).
  • Once the chicken is cooked, remove it from the air fryer and let it rest for a few minutes. Serve with a side of creamy gravy, mashed potatoes, or your favorite Southern sides.
