Cut chicken into bite-sized pieces and pat them dry with paper towels.
In one bowl, whisk together eggs and milk.
In another bowl, mix flour, cornstarch, garlic powder, paprika, salt, and pepper.
Dip each chicken piece into the egg mixture, then coat in the flour mixture. Press to help the coating stick.
Preheat your air fryer to 400°F for 3-5 minutes.
Lightly spray the air fryer basket with oil.
Place the breaded chicken in a single layer. Spray the tops with oil spray to help them crisp.
Air fry at 400°F for 10–12 minutes, flipping halfway through, until golden brown and internal temp reaches 165°F.
While chicken cooks, mix buffalo sauce and melted butter in a large bowl.
Once chicken is done, toss immediately in the buffalo sauce.
Serve with celery sticks and your favorite dipping sauce.
