Description

Enjoy Taco Bell-style breakfast quesadillas at home! Cheesy, fluffy eggs with optional breakfast meats make this quick and easy morning meal irresistible.

Ingredients 

  • 6 large Flour tortillas ,
  • 6 large Eggs, scrambled
  • 1 1/2 cups Shredded cheese , cheddar, Monterey Jack, or a blend
  • 6 sausage links, Or, 6 slices of bacon, or 6 slices of ham
  • 2 tablespoons Butter, for crisping tortillas
  • Optional extras – Salsa, avocado slices, or hot sauce for serving,

Instructions

  • Scramble 6 large Eggs in a skillet over medium heat until fully cooked but still soft and fluffy.
  • Lay a 6 large Flour tortillas flat, sprinkle a layer of 1 1/2 cups Shredded cheese add scrambled eggs, and 6 sausage links. Top with more cheese, then fold the tortilla in half.
  • Heat a skillet or griddle over medium heat and add 2 tablespoons Butter or spray lightly with cooking spray. Cook the quesadilla 2–3 minutes per side until the tortilla is golden brown and the cheese is melted.
  • Slice into wedges and serve immediately with salsa, avocado, or hot sauce. Optional extras – Salsa, avocado slices, or hot sauce for serving
