Ingredients 

  • 1 cup unsalted butter, room temperature
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon,
  • 1/2 teaspoon salt
  • 2 cups old-fashioned rolled oats,
  • 1 cup raisins

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Beat softened 1 cup unsalted butter, 1 cup brown sugar, and 1/2 cup granulated sugar until light and fluffy.
  • Mix in 2 large eggs one at a time, then stir in 2 teaspoons vanilla extract
  • Whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and 1/2 teaspoon salt; gradually add to wet ingredients.
  • Fold in 2 cups old-fashioned rolled oats and 1 cup raisins until evenly distributed.
  • Drop tablespoon-sized portions of dough onto the baking sheet, spacing 2 inches apart. Bake 10–12 minutes until edges are lightly golden.
  • Allow cookies to cool 5 minutes on the pan, then transfer to a wire rack to cool completely.
