Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Beat softened 1 cup unsalted butter, 1 cup brown sugar, and 1/2 cup granulated sugar until light and fluffy.
Mix in 2 large eggs one at a time, then stir in 2 teaspoons vanilla extract
Whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and 1/2 teaspoon salt; gradually add to wet ingredients.
Fold in 2 cups old-fashioned rolled oats and 1 cup raisins until evenly distributed.
Drop tablespoon-sized portions of dough onto the baking sheet, spacing 2 inches apart. Bake 10–12 minutes until edges are lightly golden.
Allow cookies to cool 5 minutes on the pan, then transfer to a wire rack to cool completely.
