Description

This easy slow cooker pork tenderloin comes out juicy and fork-tender every time, cooked in a savory garlic herb gravy. A hands-off crockpot dinner with just 15 minutes of prep.

Ingredients 

  • 2 pork tenderloins, about 2 lbs total
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 4 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 2 tbsp unsalted butter
  • 2 fresh rosemary sprigs
  • 3 fresh thyme sprigs
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Instructions

  • Pat the pork tenderloins dry. Stir together the salt, pepper, garlic powder, onion powder, and smoked paprika, and rub all over the pork.
  • Heat the olive oil in a large skillet over medium-high. Sear the tenderloins on all sides until deeply browned, about 6 minutes total.
  • In the slow cooker, whisk together the minced garlic, chicken broth, soy sauce, Worcestershire, honey, and Dijon. Nestle in the seared pork, dot with butter, and add the rosemary and thyme.
  • Cover and cook on LOW for about 3 hours, until the pork reaches an internal temperature of 145°F.
  • Transfer the pork to a cutting board and tent with foil to rest for 10 minutes.
  • Whisk the cornstarch and cold water into a slurry. Discard the herb sprigs, stir the slurry into the liquid in the slow cooker, and let it thicken into a gravy.
  • Slice the pork against the grain and spoon the gravy over the top.

Notes

  • Don't overcook it. Pork tenderloin is very lean and dries out past 145°F. Use a meat thermometer and check early.
  • Don't skip the sear — it builds the savory flavor the slow cooker can't.
  • Pork tenderloin ≠ pork loin. A wider pork loin roast won't cook through in 3 hours.
  • Store leftovers with the gravy for up to 4 days, or freeze up to 3 months.
