Description

Easy Slow Cooker Chicken Curry recipe with tender chicken, creamy coconut sauce, and aromatic spices. Perfect for a comforting weeknight dinner or meal prep.

Ingredients 

  • 2 pounds boneless, skinless chicken breasts, or thighs, cut into chunks
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 14 ounces coconut milk,
  • 3 tbsp curry powder
  • 2 tbsp tomato paste
  • 1 tsp salt, adjust to taste
  • ½ tsp black pepper
  • 1 cup bell peppers, chopped (optional)
  • 1 cup peas, optional
  • Steamed rice or naan, for serving

Instructions

  • Place 2 pounds boneless, skinless chicken breasts, 1 medium onion, 3 cloves garlic, and 1 tbsp ginger in the slow cooker.
  • Pour in 14 ounces coconut milk, 3 tbsp curry powder, 2 tbsp tomato paste,1 tsp salt, and ½ tsp black pepper. Stir gently.
  • Add b1 cup bell peppers, 1 cup peas, or other vegetables now.
  • Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is tender.
  • Taste and adjust seasoning if needed. Serve over Steamed rice or naan.
