2poundsboneless, skinless chicken breasts, or thighs, cut into chunks
1mediumonion, chopped

14ouncescoconut milk,

2tbsptomato paste
1tspsalt, adjust to taste
½tspblack pepper
1cupbell peppers, chopped (optional)
1cuppeas, optional

Instructions
Place 2 pounds boneless, skinless chicken breasts, 1 medium onion, 3 cloves garlic, and 1 tbsp ginger in the slow cooker.
Pour in 14 ounces coconut milk, 3 tbsp curry powder, 2 tbsp tomato paste,1 tsp salt, and ½ tsp black pepper. Stir gently.
Add b1 cup bell peppers, 1 cup peas, or other vegetables now.
Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is tender.
Taste and adjust seasoning if needed. Serve over Steamed rice or naan.
