Description

A hearty, dump-and-go slow cooker Cowboy Casserole with ground beef, corn, cheese, and crispy tater tots. Just 10 minutes of prep for an easy, comforting family dinner.

Ingredients

  • 1 lb ground beef, browned and drained
  • 15 ounces corn, drained
  • 10.5 ounces cream of mushroom, or cream of chicken soup
  • ½ cup sour cream
  • cups shredded cheddar cheese, mild or medium
  • 1 small onion, diced
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 20 ounces frozen tater tots

Instructions

  • Spray a 6-quart slow cooker insert with nonstick spray. Add the browned ground beef, corn, soup, sour cream, cheese, onion, garlic powder, salt, and pepper. Stir to combine.
  • Spread the frozen tater tots in a single layer across the top.
  • Cover and cook on Low for 4–5 hours or High for 2–3 hours, until hot and bubbly. The tater tots should be soft but cooked through.
  • If desired, transfer to a baking dish and broil the top for 2–3 minutes to lightly brown the tater tots before serving.

Equipment

  • Slow Cooker
  • Skillet
  • Spatula

Notes

  • Keep the tater tots frozen until you add them so they hold their shape.
  • Brown and drain the beef well to avoid a greasy casserole.
  • Broiling at the end is the key to a crispy tater tot top.
