Description

Make Scooter’s Egg Bites at home with this easy copycat recipe. Soft, fluffy, protein-packed egg bites perfect for breakfast, meal prep, or grab-and-go mornings.

Ingredients 

  • 8 large Eggs
  • 1/2 cup Heavy Cream
  • 1 cup Shredded Cheese
  • 1/2 cup Bacon, cooked
  • 1/2 cup Breakfast Sausage, cooked
  • 1/2 cup Spinach, chopped cooked spinach
  • 1/2 cup Bell Peppers, diced
  • 1/2 teaspoon Salt, to taste
  • 1/2 teaspoon Black Pepper, to taste

Instructions

  • Start by preheating your oven to 350°F and lightly greasing a muffin tin or silicone egg bite mold.
  • In a large bowl, whisk together 8 large Eggs, 1/2 cup Heavy Cream 1/2 teaspoon Salt, and 1/2 teaspoon Black Pepper until the mixture is fully blended and slightly frothy. Stir in 1 cup Shredded Cheese 1/2 cup Bacon, 1/2 cup Breakfast Sausage 1/2 cup Spinach1/2 cup Bell Peppers.
  • Pour the mixture evenly into the prepared molds, filling each about three-quarters full to allow room for rising. Tap the pan gently on the counter to remove air bubbles.
  • Bake for 18–25 minutes, or until the egg bites are set in the center and lightly golden on top. Let them cool for a few minutes before removing so they hold their shape.
  • Serve warm right away, or store for meal prep and reheat throughout the week for an easy grab-and-go breakfast.

Notes

Air Fryer Instructions:
Preheat the air fryer to 300°F, pour the egg mixture into greased silicone molds, and cook for 10–14 minutes until set and lightly golden.
