8largeEggs
1/2cupHeavy Cream
1cupShredded Cheese
1/2cupBacon, cooked
1/2cupBreakfast Sausage, cooked
1/2cupSpinach, chopped cooked spinach
1/2cupBell Peppers, diced
1/2teaspoonSalt, to taste
1/2teaspoonBlack Pepper, to taste
Instructions
Start by preheating your oven to 350°F and lightly greasing a muffin tin or silicone egg bite mold.
In a large bowl, whisk together 8 large Eggs, 1/2 cup Heavy Cream1/2 teaspoon Salt, and 1/2 teaspoon Black Pepper until the mixture is fully blended and slightly frothy. Stir in 1 cup Shredded Cheese1/2 cup Bacon, 1/2 cup Breakfast Sausage1/2 cup Spinach1/2 cup Bell Peppers.
Pour the mixture evenly into the prepared molds, filling each about three-quarters full to allow room for rising. Tap the pan gently on the counter to remove air bubbles.
Bake for 18–25 minutes, or until the egg bites are set in the center and lightly golden on top. Let them cool for a few minutes before removing so they hold their shape.
Serve warm right away, or store for meal prep and reheat throughout the week for an easy grab-and-go breakfast.
