Description

Make Red Robin Voodoo Fries at home with this easy copycat recipe. Crispy steak fries are tossed in blackened seasoning, smothered in queso, and topped with bacon, fried jalapeños, and ghost pepper sauce.

Ingredients

Fries

  • 24 ounces frozen steak fries
  • 1 tablespoon olive oil or avocado oil spray

Blackened seasoning

  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 1/4 to 1/2 teaspoon cayenne pepper

Toppings

  • 6 slices bacon
  • 1 cup queso
  • 2 jalapeños, thinly sliced
  • 1/4 cup all-purpose flour
  • 2 tablespoons ghost pepper hot sauce
  • 2 tablespoons ranch dressing, optional
  • 2 green onions, sliced (optional)

Instructions

  • Mix the smoked paprika, garlic powder, onion powder, thyme, oregano, black pepper, salt, and cayenne in a small bowl.
  • Air fry the bacon at 350°F for 8 to 10 minutes until crisp. Drain, crumble, and set aside.
  • Toss the jalapeño slices in flour, spray lightly with oil, and air fry at 400°F for 5 to 6 minutes until golden.
  • Toss the frozen steak fries with oil. Air fry at 400°F for 15 to 18 minutes, shaking the basket halfway through.
  • Transfer the hot fries to a large bowl and toss with the blackened seasoning.
  • Microwave the queso in 30-second bursts, stirring between each, until smooth.
  • Pile the fries on a platter. Top with queso, bacon, and fried jalapeños.
  • Drizzle with ghost pepper sauce, ranch, or both. Garnish with green onions and serve right away.

Equipment

  • Air fryer (or a sheet pan for the oven)
  • Large Mixing Bowl
  • Small Bowl
  • Microwave-safe bowl
  • Serving platter

Notes

  • Oven method: Bake the fries at 425°F for 20 to 25 minutes, flipping once.
  • Less heat: Use 1/4 teaspoon cayenne and swap ranch for the ghost pepper sauce.
  • Air fryers vary: Check the fries a few minutes early and cook in batches if crowded.
  • Leftovers: Store fries, bacon, and queso separately for up to 2 days. Reheat fries at 350°F for 3 to 5 minutes.
